I followed Derf and scaled this to serve 2 reducing the oil and cooking the fish in my well seasoned cast iron skillet. The fish had a nice crisp crust. This was served this with Oven Baked Golden Potato Wedges Oven Baked Golden Potato Wedges by Marie for a lower fat alternative to fish and chips.

Always looking for another way to cook cod, one of our favourite fish. I scaled this to half a recipe for the 2 of us and also cut the oil in half again, it seemed like more oil than necessary. The cornmeal made for a nice crispy finish and the cayenne gave it a nice little bite. Very nice and we will make it again, thanks for sharing.

Wow, this was so good! I used a cast iron pan with 3 T. oil only. Didn't have the cayenne pepper so used Spike All Purpose Seasoning. There wasn't any left. A definite keeper. Thank you for sharing.

Wonderful. I used my cast iron pan and followed the recipe as written except scaled it down to 2 servings. The only thing I would do next time (there will be a next time!) is increase the cayenne pepper for a little more bite! Served with oven roasted potatoes and cole slaw. A definite repeater.

This dish was awesome! My husband, who hates fish, loved this dish! It ws just like having fish sticks, but healthier and MUCH tastier! We'll definitely make this one again!

DH loved the crunch...out of the oven!!! Only thing that varied from original recipe is that my bread crumbs were seasoned.. Perfect Cod!! I'm sure this will see our table many more times!!

This turned out great. Due to allergies, I substituted coconut flour for the breadcrumbs and cornmeal. The coating stuck to the fish very well. And, oven frying was very simple. The fish turned out very tender (this is usually hard for me). I would not use the cayenne next time though-- just too hard on my tummy. Excellent recipe. Will make again this week.

MarieAlice's recipe worked like a charm, but I think the pieces of cod I bought were inferior, which ultimately made a difference in the end product. The coating was nice & crisp; however, it sometimes just fell off the fish. Maybe something I did wrong?
