very good aloo gobi recipe to keep as a staple. one thing - i do think 1/4cup oil is excessive. 2T oil (or ghee as i used) is adequate. i used fresh rather than canned tomatoes, garnished with cilantro and served this over a bed of yellow basmati rice. would recommend this recipe to anyone making their first aloo gobi dish.

    This recipe has taken over my life! i made it sunday for the first time and my girlfriend's mother was bowled over (good thing). i made it again last night b/c i wanted to see what would happen if i used chili powder instead of a minced chili; i also used more cumin (powder instead of seeds) and garam masala (about double what the recipe calls for) and it is SUPERB! so flavorful, i can't get enough. thanks for posting it.

    This is AWESOME!! Dad and I got together and made this for dinner for ourselves tonight. My kitchen smelt so good while this was stirring in the pot on the stovetop. Since the quantity of ginger and garlic was not mentioned, I used a 1 inch piece of fresh ginger and 4 cloves of fresh garlic(peeled, washed and finely chopped). I like to use all my veggies fresh as a personal preference and I try to avoid canned/tinned food, so I used 6 fresh tomatoes(4 Roma tomatoes and 2 Indian tomatoes). In addition to the green chilli, I also used 1/2 tsp. of red chilli powder. I used 3 1/2 cups of water to cook the tomatoes and cauliflower. As for the potatoes, I boiled the cubes of potatoes in water until they were tender and just had to be stirred into the rest of the curry. I used 2 tsps. of salt in total for this delicious curry. This was a very tasty curry and we enjoyed it immensely with Tilda Basmati white rice. Very good with plain yogurt on the side Next time, I will use just 2 potatoes. Otherwise, I will prepare it just as I did tonight. Thanks alot for a good dinner!

    This was very good. Full of flavor!I used 6 med tomatoes instead of canned and used ground coriander instead of fresh. The potatoes did take a long time to cook so my cauliflower had broken down from cooking too long so next time I will pre-cook my potatoes.(thus the 4 stars) but flavor gets a full 5 stars! Thanks for sharing Chuckdarwin!

    It's a keeper! We rented Bend it Like Beckham and it was fun seeing this dish being prepared on the "special features" portion of the disc. Great recipe! We halved it, since we weren't feeding a crowd; only the 2 of us. Not a chance our 3 year old would touch it! I used fresh tomatoes instead of canned and put them in shortly after the cauliflower and potatoes were added. The tomato addition timing wasn't mentioned in the instructions. Served over jasmine rice (would have used basmati if I'd had it) Next time I'll add a can of chick peas as well. Maybe not authentic to the dish, but would be great in it! We'll definitely make this one again.

    Absolutely mouth-watering recipe and delicious! This is coming from a discerning Indian food critic. Would recommend it to the utmost degree! I also used 4 cloves garlic and 1 inch ginger piece (fresh). Diced tomatoes w/ juice works fine.

    This was very good, I used only 2 T of oil plus 3 and 1/2 C of water to cook the potatoes. Next time, I would use less potatoes as this had too many potatoes in proportion to cauliflower. I added peas, which added some variety.

    This is a tasty aloo gobi. I added 1 teaspoon ground goriander, and use 4 cloves garlic and a 1" piece of ginger. Thamks for posting.

    Exceptional flavors. Fun to make and a huge hit with the family. I used zucchini instead of cauliflower and served it with basmati rice and cold plain yogurt. Thank you very much, we will make this alot!

    I am not sure how to rate this recipe, becaues I am not sure how this dish is supposed to turn out, but the recipe seems to be missing some details, and at point 9 my curry was wet wet. perhaps because I used two large cans of tomatoes, but can size is not indicated in the ingredients list. Also, at the end I was left with garam masala and coriander that I didn't know what to do with, so I just tossed it in at the end, I'm not sure if they should have been part of the "bhoona" or not- Anyway at the end of the day, the dish tasted really nice, but I do think it was wetter than it should have been.
