Hey, this was surprisingly good and gets extra points for being so easy. I reduced the amount of oil and used turkey kielbasa to lower the fat content. I was at a loss about how to serve this, but my kids had the idea of sprinkling it with grated cheese, which was a nice addition. Thanks, Petunia!

    I added 1/2 sliced green bell pepper, 1 Tbsp minced garlic and 1 chopped meium onion; and WOW~ my husband didn't leave a trace of it for leftovers!

    This was so easy and quick to put together, and the taste was just amazing! I loved that I didn't even have to peel the potatoes. The only reason I'm holding back the 5th star is because 1/4 c. was WAY too much oil for us. When I took this out of the oven it was literally swimming in oil. Next time I will cut the oil way back.

    We say "YES"! I added a few carrots and a small onion. I also cut the oil to half and it was plenty. Thank you Petunia!

    YUM! This was great. I used Turkey sausage and also left the foil off for the last 10 minutes to have a crisper finish to the potatoes. Very good and will make again! Thanks Petunia!

    Nice flavor and easy to prepare. I didn't have any canola oil, so I substituted EVOO. My potatoes were done after about 50 minutes. This is a good recipe to have on hand for busy weeknight.

    Wow! This is tasty. As usual I make it exactly by the recipe the first time, and this time I am so glad I did. It was perfect. If you had mushy potatoes it might be the kind of potatoes you used. I used russets and they were perfect.

    This was quick, easy and tasty. I took the foil off the last 20 minutes to crisp up the potatoes. Served with a green veg. Thanks!

    This was great!! I added some salt and pepper, halved mushrooms, carrots and onions. 10 minutes before it was done I added some cheddar cheese to melt on top. We LOVED it. Although next time I think I will use one or two less potatoes and more of the veggies. We thought there were too many. Thanks for a keeper!!!! YUM!
