We all enjoyed this soup so much Luby, it just hit the spot on a cool rainy night, served with crusty rolls and a small side salad. As Marie, I also doubled on the onion (1 x-large one), as I doubled the recipe!) and added 1 Tbsp fresh chopped garlic when sauteed the veggies. I made this with homemade chicken broth and used chopped cooked chicken that I had handy in my freezer. This soup was delicious Luby! Thanks for sharing...Kittencal

My husband loved it. My kids are not wild about chunks of veggies in their soup so I put the whole thing in the blender before I finished step number 6. Will definitely make over and over.

Oh my gosh, was this wonderful! We totally loved it. I didn't have celery on hand and so I doubled up on the onion. I also added about 1/3rd cup instant rice when the soup came to a boil. That little bit of rice added a nice texture to the soup without increasing the carb count too much. Thank you for the recipe.

This soup was very good! I added some chopped carrot to it but other than that I made it exactly as written. I fought the urge to thicken it a little more, glad I did, it was perfect the way it was. It was light and creamy. We served it with sourdough rolls. I made a single batch for 3 of us and it worked out great (with the rolls), 1 bowl for myself and my daughter, 2 for hubby

Lovely lovely Recipe,My family loved it.I also pureed it with a hand bLender before adding the chicken and added a Tablespoon of Fresh thyme at the same time.Smelt wonderful ,I served it with some toasted slices of Chiabbata rubbed with some fresh garlic cloves!needless to say The vampires stayed well away!Thanks for the Recipe

This was SO good my husband called me at work after he had a bowl to tell me just how much he enjoyed his dinner. The only thing I did differently was to use 1 cup half & half instead of the milk and cream. The cayenne gave it a nice little kick we enjoyed and the veggies gave just a small bit of "crunch". This will be made often I am sure. Thanks Luby for sharing.

Trying to cut our sodium intake, I used unsalted butter and low sodium broth and this was still the absolute best cream of chicken soup I have ever had. DH loved it too. We ate it with fresh french bread from the supermarkets bakery and a little side salad. Next time I will double the recipe and freeze for a quick lunch. Thank you Luby for this great soup recipe!

I made this last night OMG this was better than store bought, sent DD to grocery store for me today and had cream soup on list I told her to mark them off. I made it for cream of chicken for a recipe I just threw together. EXCELENT
