Excellent! I added a bit of Italian seasoning. I thought the 30 mins was a tad too long. Maybe 25 mins next time.

    Roasted vegetables are my most fav dish. Throw in some mushrooms, tomatoes, garlic - everything tastes great.

    These are fantastic! I didn't have a yellow pepper so I left that out. I added some sliced mushrooms and a handful of grated carrot to the mix for color. So easy and SO good! DH despises "slimy" squash and this got a thumbs up from Mr fussy. I think I might add some herbs and maybe a dash of pepper flakes for some added pizzaz, but this truly highlights the fresh flavor of the veg perfectly.

    I adore roasted veg. I like to cut my veg in large chunks rather than small chunks and my favorite is roasted sweet potatoes so I added them in there too. I also like to add a little balsamic vinegar at the end.

    These are delicious! I am on SBD and made this last night with the SBD turkey meatloaf. I substituted the plain salt with some seasoning salt instead (make sure it's seasoning salt with no sugar additive if you're on SBD!). I didn't have red or yellow pepper so I used a green and a mixed pepper instead. This recipe is a great veggie side dish for anyone, on this diet or not.

    This was a great side for our dinner tonight. I didn't have any fresh asparagus on hand, and instead threw a good handful of grape tomatoes into the mix. I also prepared these on the grill using a grill basket. (I had to cut the onions and peppers in rings in order to keep them from escaping from the basket.) They were roasted just perfectly and really had a great flavor. Thanks for posting the recipe.

    Great combonation of veggies that doesn't interfere with your entree. The tastes blend well. I cut up the vegetables in advance, ziploced them with the pepper and oil and was able to throw it together easily with a fettucine.

    I had this at a friends house who was on the SBD. I couldn't get enough of these!! I think I had 3 helpings, at least. It's amazing how great they taste, and the only seasonings are oil, salt, and pepper! I plan on making these soon for a get together at my house, and am so happy to have a great tasting, easy to make, healthy side dish.

    Thank you for posting this! My South Beach Diet cookbook is in storage, and I wanted to make this today! I love this recipe for veggies. I'm not a low carb diet fan, but this is a great way to get your five servings a day and/or lose those unwanted pounds.
