This was my first pita making effort and this recipe worked really well. Fresh pita tastes so much nicer than the bought stuff. I used 4 cups of plain flour and 1 cup of rye flour as that is what I had and that worked really well. The lightly floured surface is key in making this an easy recipe. I found that if I baked the pita on the middle shelf of my convection oven that I got much better puffing - it pays to experiment which is easy to do as you can only do about 2 at a time anyway. Definitely recommend this!

Outstanding!! Very authentic! I used a baking stone to cook these, which worked well. I pulled the dough into 16 pieces and evened them out because I was unsure how much dough to use for each one. It is good to make sure that when you transfer them to the baking sheet you don't make them thin in spots or put your finger or spatula through it. They get a little brown and crunchy in those spots. Also, I thought I had failed when mine didn't soften between the damp tea towels. I was so excited when I pulled one out and it was soft. I was just a little impatient. Thanks!!

This was a good recipe and all of my pita puffed up and turned out well. I did however, make a few changes. I cut back a bit on the flour and only used 4 1/2 cups, floury dough makes too much of a stiff dough and makes the bread a bit hard. I added 1 1/2 tsp of baking powder to the dough. I do this with all my bread recipes. I also mixed my dough in the food processor on low for about 5 min instead of using a mixer and kneading it. I made some of the pita thin and some thick. I liked the thicker ones as they were more soft. Thank you for the recipe!

These were great!!! They are not the same as the ones I buy fresh in the store but I will still make them again. I think 2 tsp salt is bit too much so I will use a little less next time. Thanks for the recipe!!

Never ate a pita before and certainly never made one. I love it! I cut recipe in half and made in my bread machine at manual (dough) setting. Since half recipe calls for 2 1/2 cups flour, I used 1 1/2 cup bread flour and 1 cup wheat. When machine was done, I removed the dough and separated into 8 pieces (which measuring out was 1/3 cup each). I baked as instructed all but one which I tried to fry in skillet. I will make that one into pita chips I think (maybe I didnt have the burner at right temperature). I filled my supper pita with grilled chicken, tomato, and a little Buttermilk Dressing. It was delicious. Also, I left mine in between the damp tea towels for 2 to 3 minutes.

Nice and clear pita recipe. I rolled out the dough between parchment paper which made things go quick. Just the right amount for a family of 4 plus leftovers. The 2-3 cups of flour recipes just don't make enough.

I would give this ten stars if I could! The "fun factor" would add another ten! I have just recently become aquainted with pita bread, so I was anxious to see if I could make some myself. This recipe is super easy! I will make it again! I added some Greek seasoning(Cavender's...from the spice aisle at the grocery), and I substituted 1/2 c of the all purpose flour with oat flour to make it more healthy. They turned out great. Try this one...it's fun!

The bread puffed so nicely in the oven, it was a joy to watch. Great recipe. I tried using half wholewheat flour and half regular flour and other than a slightly increased rising time it worked just as intended. I filled it with Falafel #72814, which was a great dinner. Thank you Bitsie for a new addition to my favorites.

This pita bread recipe really caught my eye because of the word easy. It was very delicious. My husband and I eat pita bread everyday with our dinner and when he tasted it he suggested I start baking it at home from now on.
