This was wonderful...I made this for dinner tonight, and everyone just loved it...I made as directed, only I used a bit more onions and garlic than called for, after I added some crumbled feta cheese along with the Parmesan...what a delicious side dish, spinach is one of our favorite veggies, but I have never though of adding it with couscous, what a super combination!...this is a keeper. Thanks Nurse Di for posting, I will make this again...KC

    Wow! This was amazing and so easy to make! I added more garlic and onions, and also added some chopped up chicken thighs for a heartier meal. I used 1/2 cup of parmesan and toasted pine nuts instead of pecans. We'll definitely be making this one again! Thank you for your recipe!

    I have just recently discovered couscous and I have to say that I LOVE it! I am on Weight Watchers following the CORE program so I did make a few changes: -I reduced the amount of olive oil to 2tsp. -added just a sprinkle of reduced fat Parmesan cheese on my serving. -omitted the pecans -used fresh spinach -added fresh mushrooms while browning the onions This dish was very flavorful, has wonderful presentation and is also very filling.     This was my first attempt at couscous. I was surprised at how easy this was. Pretty much an idiot proof recipe. It was quite good. I have recently taken on vegetarianism and so used vegetable broth but otherwise followed the recipe.

    WONDERFUL! I made this for dinner tonight, and I was a little nervous, because my husband doesn't usually like cooked spinach, but he raved over this recipe! I omited the pecans, simply because I didn't have them, and used lime instead of lemon juice, again because that's what I had, and it still turned out great.

    This was unbelievable! Everyone raved about it.(I cooked it with the Greek chicken with artichokes-Greek Chicken with Artichoke Hearts). Rave reviews for both and perfect with a crusty loaf of bread. I used Whole wheat couscous and 2 packages of raw packaged spinach- it cooks down a lot! I also added some garlic salt with the onions,garlic and olive oil. I topped it off with feta before serving and think that this really made the dish! This will be a regular recipe in my family as well as the chicken- both so easy and great presentation!!

    This was incredible. My husband even liked it. Now that means it's great! Here are some of the different things I did: I used fresh spinach and cooked it down after the onions and garlic (lots) were softened. I also used my own chicken broth that I skimmed the fat. I also added fresh herbs. I minced up parsley, thyme, rosemary, basil. (You can use whatever you like I assume.) As per another reviewer I used toasted pinenuts. I used fresh squeezed lime juice. This is really a delicious recipe. I think it is really healthy too. We ate it warm like the directions said but I can’t wait to see what it tastes like cold. I hope it is good so I can take it in my lunch.
