I am going to be quite honest and admit that deep down, I somehow expected this recipe to fail. Why? It seemed too easy...to cook the caramel as simply as one would melt butter for popcorn. I expected one sticky, gooey, horrible mess. Imagine my surprise to discover how easy making caramel corn really could be- without messing around with a candy thermometer and whatnot. I did cook just a bit longer than suggested but that may have been due to the wattage of my oven. I cooked and stirred until it foamed up quite a bit in the bowl. I did use a "kettle corn" flavor of microwave popcorn in mine, as I thought the light sweetness would be excellent, and I was right. The caramel corn was very easy to break apart once it cooled, and the buttery caramel had a slight soft texture, but not very sticky. In fact, I'd say this was perfect! Thanks for posting- this will definitely be a favorite in my home.

The caramel for this is heavenly! Just as SueL said, it is very buttery and soft, but not sticky. I think the mini marshmallows are the secret. I put half of the popcorn in the bowl, poured half the caramel over it, and tossed a bit. Then I added the rest of the popcorn and repeated the process. I like that this stays "workable" long enough to get some caramel on almost all of the popcorn. I microwaved the mixture for 2 minutes exactly and everything stirred up smooth with no trouble. this recipe was NOT what I had hoped for...I wanted something that would be crunchy like my oven caramel corn. However, it still was pleasant to eat, just very messy! It is more of a marshmellow popcorn than anything. I might make it again in a pinch, but oven caramel corn is still the best!

Super easy and yummy! Not quite a typical crunchy caramel corn, more sticky, but very good and easy. I would recommend starting with softened butter as mine wasn't quite melted and the sugar wasn't dissolved after the 2 minutes. I think next time I would melt the butter first or at least soften it, then micro together for a minute, stir, then another minute. I made my own popcorn and added a little salt when it was done. Delicious!!! This would also taste good with peanuts added at the end.

At first I didn't like it,was too surpy.I could have added another bag of popcorn.Than it was ok,tasted like a salty rice crispy square.....BUT the next day it was so good,like Zonkers.So next time I'm adding about 1/2 a bag more & spreading it out on wax paper to dry.Both my sons loved it @ every stage.Thanks!

This really hit the spot! I used margarine (what I had at the time)and it tasted great. I did have to microwave it a little longer than the two minutes. The only thing I would change next time is to make two bags of popcorn,'cause I only used about 1/2 of the mixture.I also would like to try it with butter, although I don't think it will make a difference. I will definately be making again and this time will share with my family! Oh, did I forget to tell you? I ate the WHOLE thing by myself!

Oh yeah she’s not kidding about this stuff being addicting!! I made this last night and shared it with my DH, thank goodness! This was so delectable that I would have eaten this by myself and that would have been a problem!! Anyone who is just thinking about trying this, I say JUST DO IT!!! Yummers!!! I know that the calorie count is high, but give yourself a treat, you will be very pleased!!! This is VERY easy to make! Thank you for sharing this!! This is a keeper!!

I used regular marshmellows and it worked out great. This is so easy and tastey. Not sticky at all. Thanks for a great recipe.

Wow! Awesomely decadent and my kids now think I'm the BEST mom in the world! Used light micro popcorn (like that makes a difference!) and unsalted butter. Sweet but not sticky or gooey. I can't really tell you what it's like after it's completely cooled because it was long gone by then. The one tip I have is to make sure you remove the unpopped kernels before stirring in the marshmallow mixture. Thanks so much, Una Rose!
