Decided to try this as a healthier version, knowing that the texture would be changed but hoping that it would still be pudding-like and great tasting. I used 1/2 the butter, egg substitute and Splenda. Surprise, surprise, it was a total disaster. Go for full fat, full sugar or don't go at all.

This is so great! I knew this would be a good recipe because you posted it. I wanted a carrot souffle recipe similar to the one from Piccadilly Cafeteria and I found the recipe for theirs, but I trust your recipes and decided to go with this one... SO GLAD I DID! First of all, I love the fact that you can smell almost every ingredient individually and this cooks. It gave my house such a wonderful aroma. Then, when i looked at it, it was so perfect-looking and even a little crispy on top (from the sugar?). Then, when I tasted it, I was in love! This is an amazingly good recipe and a great way to get my kids to eat veggies. I would not change a thing!!!

Oooooohhh...the taste AND texture of this was SUPER SUPER SUPER!!! It made an excellent addition to our Christmas meal this year, thanks so much for sharing, and I'm off to devour leftovers for breakfast. I will DEFINATELY be making this again.

This is the best carrot souffle recipe I've tried! Made it for Christmas dinner and it was wonderful---will definitely be making again!

Very good. Been looking for this recipe for a long time. I had a big family New Years Dinner of BBQ ribs & pulled pork. Lots of folks thought it was sweet potatoe which was what I had hoped. Big surprise to those who thought they hated carrots. Followed exact recipe, will make often.

My aunt used to make carrot souffle and it was always one of my favorite things when I was a kid. This recipe tastes just like I remember and I am so happy to have found it. Your description is right--creamy, sweet, and delicious. Glad you posted this one. Thanks.

I have been making this recipe for Thanksgiving and Christmas for two years now, and it is a definite winner. I follow it exactly and have passed the recipe along to family and friends. A staple in my holiday cookbook. Thanks

My husband, who swears he hates carrots, loved this dish, so I will definitely be making it again. I thought it was a little too sweet - the taste of the carrots was almost covered by the cinnamon and sugar. I think next time I'll cut the sugar in half. Overall, a great recipe.
