DH and I want to give this more stars!! It was absolutely delicious. Considering the fat content, I've only made it three times in the last 2 weeks!!! The first 2 times I followed the recipe exactly, the last time I sub. the mayo for fat free mayo, used fat free Kraft American processed cheese and Kraft Mexican shreddred cheese and we couldn't really taste a difference. This recipe is definitely a keeper!

Awesome! I used 1/8 cup real mayo, and 1/8 cup of sour cream. It took the mayonnaise taste out, and I think it made it taste exactly like the real thing! Excellent recipe. I am so excited. Everyone rave about my quesadillas now.

We loved these! The sauce tasted just like taco bell's. The only changes that I made were: I used steak fajita meat that was pre-made from the grocery store and I didn't use any sliced processed cheese. We will definitely be making these again it was a quick meal!

I absolutely loved this recipe. I made it for my kids though, ages 6 and 8. They liked it too, but it was a bit too hot for them, so I will cut back on the jalepeno juice next time. This recipe will be made in my house a lot. Thanks for such a good recipe!

SAUCE REVIEW. (My quesadillas were quite different, but I used this sauce) I didn't have any canned jalapanos and I thought with 2 little kids, that might be too hot, so I used just a sprinkle of Tabasco sauce instead. Very nice sauce. Will definitely be using it again for this kind of thing. (I also used your idea of a processed cheese slice in with the shredded cheddar and quite liked the results, too!)

This was great. Quick, easy, and really tasty. I was worried it would be a bit too spicy for DH, so I only used half of the jalepeno juice (I added a teaspoon of water tp keep the sauce the same consistency). Still pretty spicy which I don't remember Taco Bell's being, but good. DH used the last slice of American and I didn't notice. It was fine without, but I'll be sure to try it with next time. Definitely a keeper. Thanks.

Very good! 4.5 stars rounded up to 5. Everyone waited impatiently for these to come off the griddle. I cut the jalapenos and juice amounts in half as well as the sugar. This was a good choice for the kids. Just added extra peppers to the adults' quesadillas. Omitted the American cheese and went with a Mexican blend. Quick and tasty meal..wheels are turning for future add in fillings. Thanks for posting.

5 stars from the kids! Made exactly as directed...I was a little apprehensive that the kids wouldn't like the "kick" from the sauce, but they ate every bite (I managed to sneak a wedge too...5 stars from me!) Served with salsa and low fat sour cream.
