This soup is wonderful, Evelyn. We had it for supper the other night and my whole family gave it 5 enthusiastic stars*****. I thought adding the chopped potato peels was a great idea and something I haven't tried before. The bacon and cheese add just the right yummm factor. My husband and I took the left-overs to work for lunch. Thanks for a lovely recipe.

    I used half and half, and my husband thought it was too rich, so next time I'll still with milk as directed. What really makes this soup (I'd call it a chowder) is the combination of ingredients, so I wouldn't omit anything, but especially not the green onions which add just the right bite, though chives might also work. I sprinkled a little extra cheddar in each bowl.

    Evelyn I would like to revise your No. 7 instructions (for my purposes only). Please note where it says "Chop up half the potato peels and discard the remainder." I have changed it, (for my purposes only) to read "Chop up half the potato peels and injest the remainder." I quite like baked potato skins... LOL, LOL Wonderful flavour... I did exactly as you instructed, EV; the resulting chowder consistency pleases me; it reminds me of "home" when as a kid during winter, there was a steaming pot of ciorba, or "Supa de Cartofi cu Smantana", on the stove..... This is a beautiful flavour, EV and the ultimate in comfort food. I would change nothing. Who can improve upon perfection? Thank you for once again sharing your talent.

    Great soup, total comfort food! I followed your recipe completely. Next time the only things I would do differently would be to saute some chopped yellow onion in the butter and mix it with the roux. I will also leave out some of the bacon and green onions to sprinke on top, along with some extra cheese. It makes a lot for two people, but looks simple enough to cut in half. Thanks for another "keeper" recipe Evelyn!

    INCREDIBLE!!!! I had some leftover baked potatoes that I wanted to use and now I am going to do extra everytime I make them so I can make this soup! I did cut back on the butter a tad and used some of the leftover bacon grease instead. I also added some garlic and seasoned salt as well. The soups texture is absolutely velvety. The cheese adds flavor and colors the soup as well. I would recommend using a sharp Cheddar however. The bacon and green onion add flavor, color and texture to this yummy little number. Kudos to the chef for a marvelous soup recipe!

    This was amazingly wonderful recipe. We loved it!! I halved the recipe to suit DH and I and I used my own idea in using different milk to richen the soup. I used 1c half and half, 1cup heavy whipping cream and 2c slim milk. I added Accent, black pepper, garlic, and onion powder too. It turned out fantastic! Its a keeper for sure. Thanks for sharing this great recipe!

    I have to agree with everyone else on this one... absolutely wonderful! This was so thick and hearty and its great in a warm bread bowl. On step #11 I thought that you had to heat it through for a long time so it got thick, well believe me as it starts to cool it gets thick. Thanks again.

    This soup is sooo delicious. Baking the potatoes gives it a much better flavor than regular tater soup. I didn't have any green onions, so I chopped a large onion, sauteed it and added it to the soup along with 1 tablespoon minced garlic and 1 tablespoon chopped chives. My family started making "mmmmmming" noises when they tasted it and that is the absolute truth. I know this has become a favorite in our home. I can't wait to try some more of your recipes, Evelyn.

    Soup is our traditional Christmas Eve supper - normally smoked chicken noodle soup. Decided to try this out this year - DH said "Best soup I've ever had" - did add some seasoned salt and pepper - WOW - can't wait for leftovers.

    My dh doesn't "do" soup but he just loves potatoes so I thought it was worth a shot. He absolutely LOVED this. I also took a big bowl to my dad and he called me 15 minutes later begging for the recipe. :D Thanks for a WONDERFUL recipe!
