Very nice Saturday night supper! I did make one change, I added a sprinkle of red pepper flakes, about a quarter teaspoon, it added a nice zing. The recipe was quick and very easy to put together; we will definately make it again, thanks for sharing.

Talk about quick! It took me longer to select this recipe than to actually prepare it. I eat black beans frequently and until now never thought to add tomatoes. They add a nice flavor and bit of acidity to the dish. I added 1/2 teasppon of cumin to the beans because...well because I love cumin. Also, I used a red pepper because that's what I had on hand. This is a great low-effort high flavor dish. Thanks ladypit!

Very healthy and easy. I found it needed some salt, but that's the only change I made.

I made this for lunches and it was great! Super easy too. Added a heaping 1/4 tsp cumin and after cooking added a splash of lemon juice. Used a can of petite diced tomatoes. Served with sour cream, shredded cheddar cheese and crackers (instead of rice). Thanks for the recipe ladypit!

Quick flavorful dish that I served as a side dish with enchiladas. Nice change from the usual refried beans and Mexican rice. The leftovers were great the next day for lunch.

This is quick easy comfort food at it's best. So good at the end of a long day when you're hungry for something that doesn't come from the freezer. Plus, I love beans! I also add cumin as one of the other reviewers, and a bit of Goya Sazon! Yum.

This turned out pretty tasty! I used a combination of red, yellow, and orange peppers that I already had chopped up, but I think it was around 1 cup, and about a can and a half of beans, though I did rinse them. I also added some red pepper flakes, chili powder, and cumin, because I wanted the extra flavor. Oh and I used a can of diced tomatoes instead of the fresh. I'll be making this again!

I added a sprinkle of salt to mine, and next time I will use less pepper-personal preferences. This made a very nice lunch, and it was so easy to make. Great recipe!

This is hard to explain given all the 5 stars already. My BF seemed to like this a great deal, I somewhat less. I recently made a recipe in which black beans figured fairly prominently which I loved, but this is the first time I've ever prepared them as the main ingredient. I DID drain them, but did not rinse (as per instructions). While simmering they started to stick to bottom of pan so I stirred a couple of times. Instead of serving with rice I sprinkled a modest amount of monterey jack cheese on top. I guess my suggestion is that you'll love this if you love black beans! Thanks for posting!
