This is it. The real McCoy. If you are looking for the traditional recipe, here it is. This is delicious. I don't bother with measuring out the drippings from the bacon. I use it all. It also works well if the spinach is at room temp when you pour on the hot dressing. Some recipes indicate that you should heat the dressing in a large pan, then with the heat on stir in the spinach. Don't do it. The spinach will turn into something that looks like it came out of a can. Follow the recipe. It works.

I made this for my Valentine's Day Dinner, and everyone loved it! Instead of green onions, I sauteed some shallots with the bacon. My girlfriend loved it! Thanks for posting this.

I made this last night using a combination of baby red & green Romaine lettuce, Arugula, baby red Chard, Radicchio and baby Spinach. Followed your recipe exactly except for the sugar. I used Splenda instead. DH and I together ate the whole bowl full. So delicious! One reviewer referred to this recipe as being the "Real McCoy" and I certainly have to agree with that. Thanks so much for sharing this recipe. We will definitely be make this often.

Made this tonight. It was quick, easy and amazing! I used baby spinach as I prefer its flavour in salads. Everyone was disappointed that I halved the recipe for the three of us...we all wanted more!

Just had this tonight for supper with fresh baby spinach out of the garden. Loved it! I didn't have green onions, so I used diced purple onion- also added some diced tomato. Thanks for posting..Janet.

I haven't had a good wilted spinach salad for many years, until I made this last night for our pre-Christmas dinner. It was AWESOME! Next time I am going to double the dressing, as I used 3 bags of baby spinach, 4 eggs and 10 bacon slices.

Loved the flavor! I used honey rather than sugar and sauteed some red onion rather than using green onion. It turned out a little too wilted for us, but that was my fault - I used a bag of baby spinach and I'm guessing it didn't have six cups worth of spinach in it. I will definitely be making this again, thank you for posting!

This salad was great. I didn't have bacon, but had real bacon bits, so I sauted those in 3 tbs. canola oil. I also left out the eggs - but was wishing I had put them in! Anyways, I can only imagine how good it will be when I do it "right". Also, I put the spinach in the hot pan (with the stove off) and mixed the dressing in that way to get the spinach a little softer - which I highly recommend doing. GREAT SALAD!

Fabulous and most certainly is one of the original wilted spinach recipes. As I remember it my mother used to heat the dressing and put the spinach in the skillet (cast iron) and turn it upside down over the salad bowl letting the spinach mix with the hot dressing. Not enough to wilt the spinach though.
