Excellent way to make beets, one of our favorite fall vegetables. I liked not having to wrap the beets in foil, but put them in a covered casserole because we avoid cooking with foil. Great idea. In my ignorance,I have always washed my beets before baking them, not knowing that the water would make them steam not bake. Makes sense when you so plainly state it. The beets came out so tender and sweet that I just used a little bit of butter and just a pinch of sugar and salt. Couldn't be more delicious. Thanks Sugarpea for a new twist on baking beets.

We love beets and this is just the easiest and tidiest way to cook them! No red stained water to splatter around. Plus the beets peeled really easily too. I served them simply with a small amount of butter/salt/pepper. Just delicious. Thanks sugarpea, I think you've just changed the way I cook beets.

I put this in the oven along with a pot roast to make a no watch supper. I did not use a casserole for the beets, only wrapped them in foil, less cleanup. They turned out excellent. I cooked everything at 375 for 2 hours.

Great tip on baking beets-- I loved how these turned out, and how easy they were to peel (on that point, I was skeptical prior to baking, but I'm happy to say I was wrong). Tossed them with some cracked black pepper and white balsamic vinegar, and served alongside thinly-sliced grilled beef and horseradish cream sauce.

This was my first time making beets, and definitely not the last. They didn't need sugar, were pretty sweet as they were.

IMHO this is the ONLY way to have beets !!!! When they are baked they are so sweet and earthy ! I love 'em !!!

A great way to prepare beets for use in salads and other dishes. However, the beet juice baked into the glaze on the ceramic casserole dish I baked the beets in so it will now forever be pink, and the dirt on the unwashed beets makes it a little extra messy to skin the beets at the end.

I love the baked beets. They are incredibly sweet and very easy to make. They are great simply peeled and sliced. I wash the beets and dry them with a paper towel before cooking them. If cooking in a casserole dish, you may want to line the bottom of it with aluminum foil to prevent it from staining. Thanks so much for posting this tasty recipe. I didn't make beets often because it was so hard to peel and slice them raw. Now I can have them as often as I like and they are 10 times better!

Bingo! Roasted the night before, cooled, peeled and sliced into "chunky fries" pieces. Before serving, warmed in the micro with a bit of butter and salt/pepper. No sugar needed-naturally sweet. Even the beet haters loved these. Thx.
