I made these for dinner tonight. I cooked the roast in the crockpot WITH the tomatoes, the tomatoes made the meat incredibly tender. I added some finely minced jalepenos to the cheese sauce, using Mexican White Ranchero cheese instead of the Velveeta and served with Spanish rice (using the tomatoes from the crockpot), and refried beans seasoned with fresh cilantro. Very tasty chimichangas!

I made this last night and my husband loved it. To the cheese sauce I added a little mustard horseradish and green hot sauce, this gave it a little zing.

Everybody loved them. I did change things a bit though, I threw everything into the same pot cheese and all and rolled them up like that. Yum -

I too put the tomatoes in the crockpot with the beef....was excellent!!! Poss the best chimichangas I have ever had...thanks for the recipe

This was delicious!!! I used Shredded Beef Soft Tacos (Crock Pot) Shredded Beef Soft Tacos for the beef, and then followed the directions from there. I did not fry these in oil, but I did brush them with maragarine and baked them for a few minutes in the oven, and then topped them with a little shredded cheddar and baked until cheese had melted! Yummy!!! Thanks so much!

This recipe was awesome I love to go to my favorite restaurant and order this but now I will save money and fix it myself, my husband says this recipe is a keeper. It was so easy to fix, I used chicken instead of beef, the taste is just like I order at the restaurant, my hat is off to the creator.

Made this Chimi recipe the other night and we absolutely loved it. Cooked the pot roast in a slow cooker. I used a 14 1/2 ounce can of Del Monte Diced Tomatoes, Zesty Chili style. I will also try other Mexican-style tomatoes in the future. The cheese sauce is really delicious; used the shredded Velveeta cheddar flavor. Thanks for a fantastic recipe, pickypeanut davis! M. Joan P.S. With just the two of us eating this dish we had left-over meat mix. That meat mix makes great sandwiches. Used left-over cheese sauce on our Broccoli last night.

I made these last night for my family poker party and everyone loved them! I cooked the beef and tomatoes together in my crock pot, which gave the beef a great flavor. They were surprisingly easy to make and the sauce was so smooth and delicious. I cant wait to make them again. Great recipe!

Pretty good. I added some chilies to the meat/tomato mix to spice it up, and some cayenne pepper in the cheese sauce.
