OMG! OMG! we loved this! This was the best healthy "comfort" food I've tried! I didn't have any vegetarian sausage so I just used normal hamburger-style veggie crumbles. Terrific, I will make this many times!!

A new favorite in our house and we are new to the vegetarian diet. It was surprisingly easy to make considering the delicious end result. I didn't change a thing, didn't need to.

This is so delicious! The 2nd time I made this I used ricotta in place of the cottage cheese and a smoked gouda in place of the mozzarella cheese - wowzers! That just took it over the top. I think next time I might experiment with adding in a few roasted red peppers, for extra colour and flavour.
It's yummy either way though. As written or with a few minor tweaks, this recipe is fantastic.

We're not vegetarian so I used a pound of ground turkey that I made into spicy sausage (Italian Turkey Sausage). I didn't have green onions so I cooked the sausage with a chopped yellow onion. I used cheddar cheese and had to bake it for an hour. It was a very homey dish--filling and comforting. I suggest chopped spinach, rather than leaf (tends to be stringy). I think artichoke hearts could be subbed for spinach with equally yummy results.

This casserole is SO easy, and the results are delicious. I didn't even brown the soy sausage, I just microwaved it (I'm really lazy sometimes
). I can't think of any modifications I would make, except I'll probably try adding other veggies, too (mushrooms would be really good). Thanks for sharing this recipe!

This came out very tasty and I loved it! I used veggie chorizo sausage and a mixture of mozzarella and cheddar cheese. Thanks so much for a new favorite vegetarian meal!

WOW! This was so tasty. Very easy to make too. The only hard parts were chopping the green onions and squeezing the moisture from the spinach. I didn't put in the sausage because I didn't have any, but it was still excellent. I didn't even salt it; the cottage cheese was salty enough. I used marble cheese (the house fav), and frozen chopped spinach (easier to handle).

This was fabulous! I made two substitutions. I didn't have any cottage cheese, so I used ricotta cheese instead. I didn't have any green onions, so I used minced onions instead. It was so delicious! Thank you for posting this!

I'll definitely make this again, but I might make some modifications to try and snazz it up a little bit. I found it a tiny bit bland, but that's just my own personal preference. I used morning star breakfast sausages, and might use a mix of that and grillers originals next time for a bit of a variety of flavor. Might also add some broccoli or mushrooms because I think that it would go great with this ensemble. Thank you for the amazing recipe.
