Very tasty and easy to make! Try it with half applesauce and half oil to cut the fat. They still come out moist and delicious, as promised.

YUMMY! I doubled my recipe and made 24 BIG muffins. I don't use the small muffin tins, mine are JUMBO tins. I didn't have 4 cups of zucchini, so I used 3 cups and they turned out just fine. Thanks for sharing this recipe

This is going to crack you up. My neighbor had told me she was going to give me some zucchini from her garden when it was ready so I had planned to make these when she did. The other day I found two, what I thought was zucchini laying on my porch. So I made the muffins. They were excellent. I took some to my neighber and she said they were great. She asked what I made them from and I said the zucchini you left on my porch. She said that wasn't zucchini it was cucumbers. So....fresh cucumbers can certainly be used. They were delicious and moist and puffed up beautifully.

These were very yummy! I did do half unsweetened applesauce and half oil and I reduced the sugar to just a cup - and my four boys didn't even notice! Also I played around with not putting cinnamon in the mix, but by putting it on top with a little raw sugar and that was a big hit too! I would for sure make again.

Like others, I made modifications and my family enjoyed the muffins. I used 1/2 oil and 1/2 applesauce and I cut back on the cinnamon because 3 tsp seemed like a lot (it isn't). Next time I'll use all the cinnamon. I also topped the muffins with a cinnamon sugar mixture. Very tasty and moist muffins.

I love this recipe !!! I am a terrible cook but this recipe was easy to follow and came out perfect. I buy Starbucks Zucchini Nut Muffins daily at $1.75 each. These taste better and are less expensive. THANKS.

Absolutely great! I love making muffins and these have been added to my favorite ones. Everyone in the house loved them. I've made them a few times now. The first time I only had hazelnuts in the house and I do NOT recommend them as a subsitute. The muffins were still good, but with walnuts they are great. :o)

I just made these tonight, pretty easy recipe I did find that I had to add a little more oil then the recipe said as the dough was very dry, still turned out good. Taste yummy! Made 18 muffins. I ended up baking it for about 35-40 mins at 325, maybe it's my oven??

Deeelicious!! I'm sorry I changed it so much, but what I came up with was so nice I credit your recipe for the main inspiration. Okay, I used wholemeal flour and LSA mix instead of plain flour, left out the nuts and subbed a quarter of the oil for applesauce. Oh and I also only used 1 cup of sugar because we don't like it sweet. Thankyou for a nice, simple, tasty recipe!
