43 Reviews of Low Carb Chili

I've been on a low-carb diet for what seems forever, and I'm SO sick to death of either loads of chicken or beef, cream-based dishes and/or hours of preparation, only to find that the results of all my efforts have been wasted. I can easily say this chili is THE single best low-carb meal I've ever made. As a matter of fact, it's the ONLY low-carb meal I could easily see myself eating every week! I'm not sure why some people complained about the cinnamon, but IMHO, the cinnamon is what makes the chili THE BEST! Not too overpowering, and all the spices just blend together beautifully. Even my fussy husband went back for seconds on this. Thanks for sharing this fab low-carb recipe.. it's a staple in our house now!

I made this for my husband when he was on a low-carb diet. I couldn't stop eating it myself. I did not add the cinnamon and used fresh mushrooms.

I have made this for my husband twice and he truly loved it! I did not have any allspice so I added just a little more cinnamon. My husband is not fond of mushrooms or green peppers so I added jalapenos. It also freezes well.

This chili is very good. My husband isn't so keen on heat so I cut down on the chili powder and red peppers, but certainly didn't compromise any flavor. Very good and filling!

This is soooo good! I must say I was intrigued by the list of spices (and by all the rave reviews!). I have this simmering on my stove right now and just HAD TO HAVE A TASTE! The flavor is BEAUTIFUL! All those spices work so magically together! And to think this is low carb!!! (Who needs beans in chili anyway)? I browned my hamburger, onions, garlic and fresh mushrooms all at the same time, drained the fat and then added the rest of the ingredients. Could not have been easier! Thank you so much for posting this tasty chili recipe Chill!

Really good. I added about a quarter cup of merlot and it added a really nice robust flavor. I sprinkled cheddar cheese and a dollop of sour cream ontop to round it out. Will be making low carb chilli burito wraps with the leftovers. My husband (who is a recurring judge in a chili contest) approved!!! Didn't give it to the little ones because we made it spicy!!!!

This didn't work for me. The cinnamon was too strong and pretty much over-powered all of the other flavors. I wanted to make it as written, but I probably should have left out the cinnamon or at least reduced it. It was ok, but just not for us. Sorry...I'll probably try it again, but leave out the cinnamon.

Very tasty and it really hit the spot on a low carb diet! I made it a second time and put in less cinnamon, but it really adds a certain 'something' to the flavor.

DH is on a cooking spree. This is second "real" homemade meals he's ever made. He added habeneros to make to it real spicy. I practically ate the entire thing (not in one sitting tho). He liked it, but didn't like the all spice flavoring. At first he thought it was teh cumin, but after I tasted it, I knew right away which spice he didn't like. The allspice and cinnamon gave it a squash/pumpkin pie sweetness to the chili. Mixed with the spicy hot, the combo was to die for, IMO. We are making it again tonight and the allspice, cinnamon and cummin out. ARGHHH! I thought it was GREAT with it. We'll see how it comes out tonight. Thanks for this keeper!

Okay - I'll be the dissenting opinion. I thought this was awful. I'm not sure if it was the bay leaves or the allspice but something in this concoction was very "off". It didn't taste anything like chili - that isn't so bad, I acually wouldn't have minded that. The problem was, it just tasted weird - not a good flavor combination at all. I do not recommend this recipe at all.
