This is so fast, easy, and best of all delicious! Love the Asian flavors of the soy sauce and ginger mixed with all the other flavors, and no oil or butter... YEAY!! I just tweeked the recipe a bit to suit my tastes by adding a minced hot chili pepper and using only 2 T of sugar. I ate this without the rice, but there is a nice amount of sauce for serving with rice. Well, now that I've written this I have a craving for it again! I'll be making this often

    Yum! I would have never thought to combine these ingredients and that they would taste so good. I'm never having plain old kidney beans again! Thanks for the recipe!

    This was so delicious and so easy to make! I have never eaten kidney beans and this was a great introduction to them! I usually don't like ginger but in this case it blended very well and didn't overpower the dish. Thanks for a great recipe!!!

    I used only 1 Tbs soy sauce and used 2 Tbs chili sauce instead of ketchup. Really good over rice cooked in orange juice!! I used the leftovers in tortilla the next day. Very economical and good!! Thanks Cornelia.

    I like to cook 3-4 vegetarian meals a week. This was a quick fix with ingredients I already had on hand. The family loved it. I served it over brown rice and had mixed veggies on the side. This was very filling!

    We really enjoyed this. It seemed to beg for onions, so I sauteed a bit of chopped onion in a little olive oil before adding the rest. With the onions I added the garlic and a good sprinkle of red pepper flakes. I also didn't measure the ginger, but I probably added something closer to 1T. I served it over jasmine rice, and DH asked for the leftovers for lunch!

    The first time I tried this I thought it was a little too sweet. This time when I made it, I reduced the brown sugar to 2 Tbls. and it made all the difference, I thought. Also added 2 Tbls chopped, sauteed onions and substituted 1/8 tsp ground ginger for fresh. Served it on rice with a side of corn. Very good meatless meal.

    We loved this. I used a paste of garlic and ginger instead of those individual ingredients. Otherwise I made it as written. Very easy, very fasty, and very healthy. We ate it over brown rice with raw carrots and cucumber and fruit salad for dessert. Yum. A great choice for "K" in the Healthy ABC game!
