I would give this 10 stars if I could. I always hated zucchini, never could find a recipe that would make them tasty to me,and I tried...But this one is the bomb! And I bet you could even speed this up, by putting the halved zucchinis in the microwave for a minute or so, instead of boiling... The Ritz crackers are a must, I think it wouldn't taste quite as good with bread crumbs.... So, anyone out there that hates them, this is your chance!

You are so right, MustangMom, everyone should try this! It is a very flavorful and elegant way to fix zucchini. I like that it is just sliced in half lengthwise. I took your suggestion and used the crushed Ritz crackers in the topping. Very, very nice recipe - thanks for sharing!

This was excellent!! I boiled the zucchini for 8 minutes, but next time I will only boil them for 2 or 3 minutes. The final casserole was a bit soft. I like my zucchini a little firmer. I left out the chives because I did not have any. I used the breadcrumbs, but I will try the crackers next. I will make this often! Thanks, MustangMom

Nicely flavored casserole. I used cracker crumbs as suggested. I also substituted seasoned salt for the salt. DH commented that this was very good and DS had seconds. I don't recall DS having seconds of zucchini before!

These were great!!! Everyone loved this Zucchini recipe. I loved the fact that the zucchini is kept whole and just covered. I used the Ritz crackers as recommended! Fantastic recipe Mustang Mom!

This truly IS delicious zucchini casserole! The ONLY change I would make is to only boil the zucchini less. Mine cooked for about 8 minutes as they were big, but next time only 5 minutes for me. When I was putting this together I thought I am not going to like this, but it is fantastic. The flavor the "sauce" (to thick to be sauce for me) adds is incredible, especially the fresh chives. I used crushed club crackers for the cracker crumbs and was quite impressed. A repeat recipe here for sure!

This was a superb zucchini dish that both my son and husband liked (they don't like zucchini!). I cut in half using only 2 tbs of butter and it was plenty rich. I had to sub white onion and garlic/onion powder for the chives. I used my pressure cooker to boil the zucchini (about 6 min.) and my dish baked in about 20 min.I agree that crackers make the nicest topping. I used Breton brand (a little crisper than Ritz). Have been looking for this recipe for a while. Very good- I made mine with yellow squash and zucchini and cut them into slices. Also made it twice- once with chives and paprika and once without because I had none and it tasted just as good as with the ingredients!

Please tell your mom she rocks! My 12yr old ate seconds of this and he only eats vegetables because I make him. I nearly fell off my chair when he reached for more. We all loved it. My zucchini were quite small so they were done in about 25-30 min. (I did use the cracker crumbs) You can bet this will be on our table regularly. Thank you so very much Mustang Mom!
