An easy quick recipe which made a delightful change from rice or potatoes. It is also a great base recipe that one can change the cheeses to alter the flavour or add sauteed vegetables such as red peppers, mushrooms and green opions are just some ideas. Thanks for sharing!

Yummy! I have never tried Orzo before, and really wanted to. I bought it, then looked on Zaar for a recipe. I used Low-Sodium Chicken Broth & 1/2 cup grated cheddar cheese. My kids would not have touched it had it been Parmesan cheese! :o) This dish I will make again. Thanks Muffin! Steph in Ontario

I love Rachael Ray's recipes and this is no exception. This was a great change from regular rice. It really had a nice cheesy flavor. My husband especially liked it.I will definitely be making this again. Roxygirl in Colo.

This was so easy, and a nice switch from our usual rice with grilled Ahi. Tom thought that it was very tasty, and we both liked that it wasn't loaded with salt like boxed rice pilaf or couscous. A true keeper. Thanks Muffin Goddess!

Love this recipe, ingredient measurements are right on, I used half very sharp cheddar half oerm. and added 2 T. cream to bind it, lovely!

I have made this many many times after seeing it on a "Picky Eaters" episode of Rachael Ray's "30 Minute Meals." It is always a huge hit with my husband, picky eater son, and now even our just-turned-one year old! I always half the recipe, use butter instead of olive oil, no garlic, and no salt and pepper. The parmesan took care of the salt I think. Anyway, it is incredibly easy to make, I usually have the ingredients around, and it goes with almost any main dish meat. I have even made it without the onion and used onion powder in an emergency. It didn't turn out quite as good as when I use the real onion, but it still really beat a prepackaged envelope sort of starchy side dish. A real winner - can't say enough good things about this orzo! It is really very versatile without being too generic.

I halved this recipe since there was only 2 of us eating and it translated just fine. In addition to the ingredients listed below, I added a few red pepper flakes for some zip and it was a great addition. I also decided to add more cheese (because what's not better with more cheese?!) but it made the pasta too sticky. LOVED the recipe...but I should have trusted Rachael Ray, huh?

I always find the taste of parmigiano cheese a little overpowering, so instead of adding the 1/2 cup into it, I just added a bit for a topping, that way I could have just a little, but my boyfriend could add a ton!
It was absolutely delicious!

We loved this! It was so darn easy....but I forgot in my haste (or it could have been the martini I was sipping while cooking) to put in the cheese...still was great even without it...Next time I will lay off the martini's and add the cheese...
