Most of the time, when I serve a recipe without meat, the family really complains. So, to please them, I sauteed some smoked sausage with the vegetables before adding the rice. After the spices were added at the end, the white rice took on the greenish yellow color of the cumin and curry with the black beans mixed in, so at first everyone just stared at their plate and didn't know what to expect. Well, after the first bite, there was no doubt - everyone loved it! There were no left overs. Next time I'm going to make it my way - no meat! I'll be sure to serve some meat on the side for the rest of the family. Thanks for sharing this delicious and healthy recipe.

Wanting black beans and rice for dinner tonight (with Cajun chicken) I made this recipe. It was great...easy, very tasty. I think next time I'll go just a little bit easier on the Cayenne Pepper (please husband). Other than that it was terrific and I imagine tomorrow it will be even better. Thanks for posting...

Great lunch for us today with this recipe! The only change we made was to use chicken broth (that's all I had available) and reduced the cayenne to make sure it would be mild enough for the kiddies. It was great and we'll be making this often. I love that the rice is incorporated into the dish. Along with a nice green salad, it was an easy to eat and easy to serve meal! Thanks for posting this.

Easy to make and delicious! I also used brown rice instead and when I got to the very last step of adding spices, I discovered that I didn't have any CUMIN! So I substituted chili powder instead, left out the curry, and added oregano; it still turned out great. I have since purchased cumin and plan to make it as is!

We loved this! We served it as a side dish and made just as directed. My DH mixed some jalapeno with his (he loved it that way), but I thought it was perfect just as it was. Thanks, Rita!!

Had to do a review on this one! Very good. Very easy. The flavor is consistant with the mayan empire where cumin and black beans were common ingredients. I have a yellow rice recipe that I have used as a side but this will be replacing that as a regular side with our mexican main dishes. I did substitute chicken soup base for the vegetable broth and omitted the cayenne pepper. I used 1/2 the curry powder instead(red curry powder)I like the fact that the curry boosted the flavor of the cumin without giving it an indian flavor(just not in keeping with the mexican flair I wanted) and still had lots of flavor. I also used 2 cups of black beans because that was all I had. Excellent recipe. Very flexible.

I am not a black bean fan usually but these were really good. I used brown rice instead of white and cooked it seperately.Very tasty with cornbread!

Thanks Rita. I have made this twice now. The first time I found the red peppers got too mushy (but the taste was great)so the second time I added the peppers when the liquid was almost absorbed. Really easy, really tasty! Sorry...forgot the stars 1st time around
