This went over wonderful at a family cookout. I spread out the heat from the peppers by putting them in the blender with the mayo, and half of the celery and scallions. It also gave the mayo nice color. In addition, I splashed my personal helping with a little texas pete.

VERY nice!! I had been tired of the usual potato salad for a long time, and I figured, "hey, why not give this Man's Potato Salad a try", well, WOWIE! I am having this for lunch as I type this, and, I cannot tell you how much you should give this one a try. I added the celery, and kept the chipotle seeds out of it, and it was fantastic! Highly recommended!!

This salad two days ago and am glad I waited to review it. The flavor really improved with overnight refridgeration. I used 3 chipolies with some seeds. The spicyness was just right. Thanks for sharing.

Oh gosh, this was SO good! I made this tonight for a BBQ along side Bergy's Spicy Skewered Chicken, Spicy Skewered Chicken. What a big success this was, everyone just went at it like no tomorrow LOL! I used chipotles from a jar and chopped them up, and used fresh Italian parsley from my overstocked garden. I doubled the recipe, but only used 6 eggs...Rita, this is the most delicious and different potato salad, I will certainly make this again and again. Thank you so much for sharing another winner...Kitten

I must say when I saw this recipe I couldn't figure out how these ingredients would go together. Boy am I glad I tried it! If I could rate it 10 stars I would. I used low fat mayo, more chipolte (I like it hot!) no bacon, and I added some adobo spice, cumin and cayenne pepper. I also added green chilis I had leftover in the fridge. This is the last potato salad recipe I need. Thanks alot Rita!

This puts regular potato salad to shame! Dh and I are not potato salad eaters but he loves bacon and I love black beans & peppers, so thought I'd put it all together for Super bowl. I used all 4 peppers with seeds and did not find this to be very hot but I am also accustomed to drowning everything in habanero sauce so I am not very heat sensitive. I always substitute low fat where I can so used fat free mayo, it was still delicous, Thanks!

Excellent and different twist on traditional potatoe salad. I served this with Mean Chefs Pulled Pork #26257 and it was a big hit. I did use 2 Chipotle peppers, seeded and it was not overly hot, but the peppers added a nice smokey flavor to the dish. I think next time I may leave a few of the seeds on the peppers to add a bit more heat. Thank you Rita for sharing the recipe- it is definitely a keeper.

we loved this salad; I used 2 chipotles with seeds and it had a nice kick without being overpowering, didnt have any bacon on hand, which i am sure would have sent it into salad greatdom, but it was wonderful anyway.

What?! I can't believe I never rated this. This is the only potato salad I make. I omit the bell pepper,use regular onions and add lots of chipotle but other than that I follow the recipe. Its really delicious.

Excellent potato salad! Like another reviewer, I used half mayo and half sour cream. Used 2 chipotles with seeds and it was really spicy, but we love it like that. I'd recommend serving this with barbeque chicken (with a sweet sauce) and key lime pie. The sweet, the spicy and the tart taste great together.
