We really enjoyed the mix of ingredients in this salad. I'm so grateful that it doesn't have anything to do with greasy ramen noodles and packages of powdered soup mix! For family preference, I switched around ingredients and quantities, but used Normaone's basic ideas. I used a rotisserie chicken that I shredded. For the sauce, because it was a rotisserie chicken and probably had enough salt, I reduced the amount of soy sauce by half and used a "light" variety. I also used rice vinegar and doubled the amount and halved the amount of sesame oil. I substituted green onions for the red onions and added in an ample amount of mandarin oranges. To add color, I included two beautiful red peppers. I realize these changes seem like a lot, but I don't think that it would be that different from the original recipe. My family loves this and has requested it again and soon! Thank you for posting this!!

I really loved this salad, it is so healthy and flavorful. I thought the ginger would be too much but it was perfectly seasoned. I used Un-Boiled Chicken for the chicken and it worked perfectly in this salad. Next time I will add more crunch to the salad...maybe snow peas, chow mein noodles or peanuts at the last minute. I also added sliced red peppers to it as well. Great salad on a 90 degree night!!

Very good and healthy. I made just enough for myself for lunch and wished I had made more for a snack later. Will make again and send along...thanks for the great recipe.
