Great change from boiling or steaming! I used an extra 3 tbsp of melted butter in addition to the oil, and just mixed the oil, butter and minced garlic up in the casserole dish. I also had to bake it for an extra 15 mins. I will make this again.

This is an excellent way to make cauliflower. Found I had to bake it a little bit longer, as it was still hard after 25 minutes. I also sprinkled some toasted bread crumbs on it, along with the parmesan cheese. Also mixed some of the cheese in with the cauliflower, as suggested by Zoe302. My guests loved it.

Delicious and simple. I had alittle bit of broccoli, so I cooked that along with the cauliflower. The cheese really adds a nice flavor to this dish. We enjoyed this very much. Thanks Marie, I'll be making this often.

I liked this. It got my b/f to eat cauliflower so I'm not complaining. Next time I will put the parmesan cheese in with the olive oil, garlic and cauliflower while roasting to spread out the taste more and I will sprinkle bread crumbs on top to make it a little more crispy.

Amazing!! My 11 yr old son hates cauliflower but loves this! My daughter who loves cauliflower just steamed with spray marg. & season salt did not care for it. Go figure! I loved it. I made it for dinner a couple weeks ago and gave him some. His first comment to me was "Moooom, you know I don't like cauliflower" Told him it was a new recipe and he had to try it. He couldn't stop eating it!!! He ate the leftovers the next day. He even requests it for dinner all the time. I only made one change, that was the addition of season salt after I shook it with the oil and garlic.

This had nice flavor and we liked it. It was very easy to prepare. I sprinkled extra cheese on it while serving which made it more delicious. I served it with veal.

This REALLY is a must try! Quite possibly the best cauliflower I've ever had. Roasting it with loads of fresh garlic and olive oil is simple and fabulous. Please use fresh garlic, parm and parsley! With such a simple recipe, you can really taste the difference. I could have eaten only this for dinner and been happy. Thanks, Marie, for a fantastic recipe!

We recently went to Uno Chicago Grill and one of their side dishes was cauliflower. Our waitress assured us that it will be the best dish that we have ever tasted and it was. She explained that it was cauliflower with garlic butter, pepper and parmesan cheese. So when I looked for a copy here, I thought that this may be close. It was, but I did substitute butter for the olive oil. Thank you for posting - my children told me that this is the only way I am to make cauliflower!
