I have been doing the low carb thing on and off since 1999 so these 'fauxtatoes' are not new to me. This is a wonderful recipe! My family will not eat the real things anymore. Hints-use a 2 oz.chunk of cream cheese versus the sour cream to make them less watery, and an immersion blender works great for pureeing into glorious peaks of white. I especially like these served with Mille's Boston Market Meat Loaf-#28927. MMMMM good.

    While I'm not on any type of diet, this still made a wonderful side dish!!! I tripled the recipe and glad I did because it disappeard. I seasoned it with salt, pepper and garlic powder. This is a different way to prepare cauliflower...we loved it! Thanks for sharing.

    This is an excellent way to get your mashed potato fix without the potatoes! The kids loved it and until I mentioned that it wasn't potato, nobody really noticed the difference. The sour cream really works to hide the "cabbage-y" taste and I also added a couple of roasted garlic cloves that I had on hand. We'll be making this often! Thanks for posting this.

    I didn't use the blender (don't have one right now). So my texture was a little off. The flavor was dead on, and everyone ate them despite the textural problems. I can't wait to try them again with the blender.

    I boiled my cauliflower in chicken broth til very soft , drained the broth and added remaining ingredients plus chopped chives. I used an old fashioned potato masher. I placed mixture in casserole dish, topped with cheddar cheese and baked til melted. UMMMMMMMMMMM.

    AWESOME!!! I have been trying different recipes to TRY to get my husband to eat vegetables...He really enjoyed this one!! And this is a man who is so hard to cook for when it comes to his veggies...THANKS SO MUCH!! We are not even on a low carb diet!!!

    Very good! I added a couple of additions for my taste. I like to make my "real" mash potatoes with Neufchatel cream cheese (lower calories) and also reduced fat sour cream. I added a lot of garlic powder also with salt and pepper. I also used butter buds. This came out like my mashed potatoes that everyone in my family loves. Now for the big test. DH will have to try these without knowing what they are. If he likes them and I can fool him hooray!! He HATES veggies.... I will update! Thanks!!

    I’m trying a number of different ‘faux -tato’ recipes and this one is a bit different because it uses both sour cream and butter and encourages customization through the use of herbs and spices. This is my favorite way to cook- a simple recipe that I can dress up to suit my tastes, or a specific meal. I used frozen cauliflower florets, steamed in the microwave rice cooker/steamer, then mashed them using the potato masher since I prefer the firmer texture achieved this way. We liked this version, and it certainly is simple to fix. Thanks for sharing!
