This is fantastic, however, I garnish with shredded cheddar cheese, crumbled corn tortilla chips and chopped green onions. I do not serve the Pico de Gallo. I half the recipe, and do not use chicken. I keep the masa hirna in the freezer, and put 1/2 cups of encilada sauce in baggies and freeze them! Recipe halfs nicely. I guess I have made it a cheese enchilada soup.

We've made this several times, so it's about time we write a review!
This soup is amazing! We make just as directed, except we sometimes use the precooked oscar meyer grilled or oven baked chicken strips you buy in the deli section (2 packages - cut up a little more) to save time. We have also used both regular enchilada sauce and green chile enchilada sauce - the flavor varies slightly with each, but both are wonderful. Enjoy - this is a great soup!

This was an absolute hit at dinner tonight. There is barely any leftover. I just added one small can of crushed tomatoes and some diced jalepenos. Served with some corn tortilla chips and sour cream with some diced tomatoes on top and couldnt have asked for a better dinner!!!

This truly is my favorite soup! The CopyKat version is good, but this one is excellent! I have been making this for several years and it has become a staple in my family cookbook. Thanks for posting.

This soup was awsome! It is definately a keeper! Next time I might add some Rotel, or some crushed tomatoes for color...

I am serving this tonight with Pepperjack Cheese & Chicken Quesadillas. The soup is wonderful. My son keeps sneaking in the kitchen and tasting it. I hope there is enough left to serve! I followed the recipe, with the one exception of adding a can of Rotel tomatoes & chiles. Also, I cup corn tortillas very thinly and deep fried them for the garnish & will also be offering sour cream, the recommended Pico de Gallo, and diced green onions. Thanks for a keeper--we'll definitely be making again.

This was really good. I dont know if it was as spicy as chilli's but it was definatly good. I added black beans, corn and some tomatoes to the soup. Thanks so much

Very good! It's been a long time since I've had Chili's soup, so it's hard to say how similar this is. But we loved this soup with some crumbled up tortilla chips and just plain fresh diced tomatoes (didn't go to the trouble to make the pico.)

We decided if you don't make the Pico de Gallo you have not really enjoyed this recipe! The Pico de Gallo makes it wonderful! The cool, spice, kick it adds makes this soup. No way I was finding "Spanish Onions" in my neck of the woods, but did have the rest and used a small white onion instead. Followed this recipe exactly, otherwise. Will for sure make this again - great recipe- thanks for sharing!
