Excellent. I'm picky about oatmeal consistency, and this was not mushy at all and almost cake-like, which I just loved. I refrigerated for two days due to poor planning on my part, and it still baked up great. I did take a few liberties and added about 1 tsp cinnamon, a dash of nutmeg and a cup of diced apples. The smell while it was baking made me think of apple pie. This is so versatile and something I'll definitely make again.

If you love oatmeal, this is for you! Fantastic! We loved this fresh out of the oven and it made for a delicious, easy, warm-it-up-before you go breakfast on subsequent mornings after we originally made this. We have topped it with leftover blueberry sauce, sugar free maple syrup, and vanilla yogurt and all tasted fabulous. We did substitute splenda for the sugar and it worked beautifully. Thanks for a real keeper!

I had never baked oatmeal, but surely will again after this easy and delicious recipe. I halved it, baked it up in 12 mini muffin tins,and they came out perfect after about 20 min. My kids loved them and so did I!

This was really good! I added a tsp of vanilla like others suggested and used cinnamon applesauce. I think I might try some pumpkin pie spice in it sometime. It was super easy, quick cleanup, and my whole family loved it! I didn't have vanilla yogurt, so I served it with butter and syrup. The leftovers were even better because they had a more chewy texture. I'll be making this again and again. Thanks!

I'm on Weight Watchers Core, so I modified the recipe a bit by using no sugar added applesauce and splenda. I also cooked it in a 9 x 13 cake pan. Good recipe! Especially easy if you want oatmeal for the week without the hassle of having to make it everyday. Just heat portions in the microwave for a quick breakfast. Thank you!

I made this for breakfast today. My husband is writing his comprehensive exam today so I figured he could use a high carbohydrate breakfast since the brain can only use energy supplied from carbs. This was very very tasty. I threw in about 1/3 cup of chopped dried apples, about 3 tbsp of sweetened dried cranberries, 1 tsp of cinnamon, 1/8 tsp of all spice, and 1 tsp of vanilla extract. I then made vanilla yogourt out of my homemade plain yogourt by adding 1 tsp of vanilla and 3/4 tbsp of powdered sugar to about 1/2 cup of yogourt. This combination was so good that I would even serve it to overnight guests.

This is great. I halved the recipe, added an ounce of raisins, and baked it covered in two small pyrex custard cups for 45 minutes. Used splenda for the brown sugar. Really tasty with vanilla yogurt on top! Next time I might add a little vanilla extract and nutmeg, and try chopped dates instead of raisins. Yum, thanks for posting.

I made this as the recipe is written, and while it was good, I think it could definitely benefit from a few additions, mainly raisins and cinnamon as some other reviewers suggested. I think I might even try it with some nuts to give it a bit more crunch. Thanks for posting it, I've never tried baked oatmeal before, and I like this as a base recipe I can 'tweak' to my own tastes.

First of all this is VERY easy to prepare, I mixed the night before and baked the next morning. I don't know what I was thinking because I was prepared for a more creamy oatmeal. This is like a wonderful oatmeal cake. When eaten while warm it is very moist and chewy. I took other reviewers advice and added vanilla. Since I had half an apple already cut I also put that in with a few dashes of nutmeg. It is wonderful topped with the yogurt, to which I also added a little nutmeg. This would be a good grab and run breakfast, without yogurt of course. So much more healthy than a donut or other quick junk, and so much cheaper. Moms...this is a great recipe to keep cut into squares in the frig for the kids to grab on the go, they won't even know it's good for them. I highly recommend. Thanks keen5 for this keeper.

I usually just microwave my oats, so I enjoyed this 'deluxe' version! I halved the recipe as I was only cooking for myself and I did make a couple of variations. To adjust it to my dietary requirement I omitted the brown sugar and added a tablespoon of splenda and also added four tablespoons of vanilla flavoured protein powder. I also added a dash of cinnamon. I cooked it in a small round casserole dish (no lid) and after 30 mins it was set around the outer inch with a few crispy bits and creamy in the middle. Tastes quite like apple crumble - the vanilla yoghurt also goes really well with the dish. Thanks.
