Very good- I think we may have used a little more than two cups of Fuji apples, but they're great. They don't really taste much like apple pie per se, but its a very interesting muffin in that they are very filled with apples and it is almost like you are just eating apples chunks just held together by batter/muffin. I used half butter and half vegetable oil for the muffins (ie 1/4 cup each), which worked quite well, but I think that I would have just as soon used all vegetable oil- I like it better for health and for price and in a flavorful muffin like this one, I think the 'butter' flavor is not key to the recipe (perhaps in the topping it is?). They are not an extremely fluffy muffin, but dense and intensely apple-y. On my first dozen (I got 21 from this recipe) I put less topping for fear I should run out, but had enough to be very generous on the last 9, and I think that the crunchy, sweet, buttery, cinnamony topping really adds to these. My primary problem with these is the sweetness, though- I used less sugar in the recipe than called for (1 cup brown sugar) and still found them a bit saccarine, expecially with the topping. This may be partially due to the sweetness of my apples, though and perhaps it would not be too sweet with say, Granny Smiths. Regardless, next time I would cut the sugar down to at least 3/4 cup. As they are they taste more cake-like than muffin-like to me. I had no problem with the bread-part being chewy- mine is perfectly tender and very moist. I also chose to fold in the apples last after mixing in the dry ingredients, as par most other muffin recipes I have made. Thanks for posting, these are very good, but a little sweet for me.

this recipe makes great moist muffins! We have a granny smith apple tree, and hubby doesn't like even apple pie or apple/fruit anything except to eat them fresh, which this kind of apple isn't too good for. He does love muffins and I bake lots of them for him to eat on his morning drive to work. I made these last nite and my kitchen smelled like heaven at 2a.m.!! dh even got up to see what smelled so good,,,and I was naughty and didn't let him have one til this morning, lol. He really loved this muffin, so instead of giving all our apples away, I'm freezing loads of them to make these muffins for him. I followed your directions exact, and diced the apples fairly small. I made 6 jumbo muffins and 6 small. They raised well and no problems even tho I tend to fill the tins more than most cooks. the jumbo muffins took about 5 minutes longer to bake. Thanks so much for providing a good recipe to use our apples in!! Kitty

Great recipe. I had one while it was still hot, and I know it will only get better once it cools. I thought that they were delicious, the only thing I didnt like about them is that mine came out too greasy. I think next time I will not melt the butter for the steusel topping, my topping was like a paste. I like it to be like crumb. The house smelled fabulous. Next time I think I would probably add more cinnamon to the batter. I thought that they werent over sweet, but like I said after they cool, the taste will intensify. I used 2 large macintosh apples, cut them medium which gave a nice texture. I love biting in a big chunk of apple in my muffin, I think the smaller you cut the less taste you will have(just my opinion

Absolutely DELICIOUS!! These are soft, wonderfully moist and yummy, yummy, yummy!! My little girl and I had a great time baking these yesterday...she especially liked sprinkling the topping on them!(and licking the bowl of course!!
) I used a tablespoon of lemon juice to make my buttermilk but other than that followed this easy recipe exactly.They smell awesome while baking and taste even better! These rank among the best muffins I have ever made! Thank you so much Pamela, this is a definite keeper!

I give this one a five star also. I when by the directions and they turned out great! What a wonderful smell they left in my house. I really like apples and this hit the spot.

Wonderful recipe. Thanks for sharing. I did not change a thing and found these to be moist and delicious. I have been looking for a good apple muffin and this recipe is it! I used Granny Smith apples and would highly recommend them. Again, THANKS!

These are very nice muffins, chock full of apples. I did have to make some substitions, as I guess I really do need to go grocery shopping. I came up short on both flour & brown sugar. So I subbed whole wheat flour for 3/4 of a cup of white. I didn't have enough brown sugar for the topping, so I added the cinnamon to the batter as I really didn't want to give up that flavor. I sprinkled ed a bit of turbinado sugar over the top of the muffins instead. I got 18 muffings, which were dense & full of fruit. They didn't rise much, possibly because of the whole wheat flour being heavier. I went with four stars only because, like Roosie, I found them a bit too sweet. But I am sure I will make them again, with less sugar next time. Thanks, Pamela.

I made these into mini muffins for my 3yr olds stay and play group. They were devoured by all the kids and most of the parents asked for the recipe. It was so easy to prepare and they taste SO good.

Pam, I have to tell you that these muffins were simply outstanding! I got 7 jumbo muffins out of the batter... I whipped these up this morning, and they are almost all gone, my son ate three of them himself LOL! I used apples from my neibhours house, and grated them instead of dicing (measuring out 1 cup grated). This is a wonderful recipe Pam, I will make these again soon, thank you so much for sharing...Kittencal
