Very fresh and light appetizer. After spreading the cocktail bread with the cream cheese mixture and topping with the cuke, I used a fluted round biscuit cutter to make pretty rounds. The sandwiches made a very attractive presentation (I garnished the plate with a few tiny cherry tomatoes). The best part was that they taste as good as they look! --- Amendment...I have made these several times now...and see that I have failed to mention that I don't use an entire package of the Italian seasoning mix. I think that would be far too salty. I just blend a bit at a time with the cream cheese until it tastes good to me.

Oh yum, I made these delicious little appetizers for a little back yard get-together tonight, what a big hit they were, these were so good, I am only sorry that I didn't make more, they were just gobbled up in no time! I went to the store especially today to get the cocktail bread, and my store didn't have any, so I used rye bread, that I cut into circles. Also you did not specify what size of cream cheese package to use, so I made this recipe using an 8 ounce package.
This is so fast and easy to prepare, and I like the idea of being able to make them advance. I will be making these again, fantastic recipe Judy! thanks so much for sharing....kittencal

Quick, easy, nice presentation and great taste! I made these for friends on a football/tv afternoon and everyone like them -I liked the easy recipe! One note, I mixed 2 dashes of Tabasco rather than 1 dash and really didn't notice the "spice" from it at all, so if you like things spicier you might want to add a bit more after some taste tests.

This is great to have on hand at parties. It is a nice alternative to a veggie plate. Here's a little trick. I cut the bread with a cookie cutter so that they were round.

This was so easy and tasty. I even made the mix the night before and then spread it on the bread just before serving. I decorated the tops with a half slice of thinly sliced cucumber. This one is a keeper. Thanks chef Judy.

We made these for a Bridal Shower we were hosting and they were very good! Nice, refreshing, clean taste. LOVED them! Can't wait to make them again.Thank you for posting Judy!

I used a special Danish Rye bread - similar to a light Pumpernickle, cut each slice in four. Served this appie with two hot ones and these were devoured as quickly as the hot ones - need I say more? 22April 07 Made these again for a special dinner for special friends and once again received rave reviews. I made the cheese mixture in the AM, cut the cuke etc and just assembled them before serving - took minutes Once again Judy- Jude thanks for posting 15 April 09 Made angain This time a Used a Nabisco cracker under and added a shrimp on top of the cuke. Lovely

Made this for a catered party I did last night...put them on 3/4" baguette slices which I had baked in the oven (buy the baguettes unbaked). I doubled the recipe, but only used 1/2 of the Italian Seasoning mix. The English cucumbers were sliced into ribbons and I cut the ribbons in identical lengths (just long enough for the bread width from top to bottom of the bread. I placed the cukes side-by-side so the green peel was on both sides of the bread and a stripe of it in the middle of the bread. Then I topped the cukes with a slice of black olive and a small piece of pimiento in the middle. Everyone thought they were cookies! I should have quadrupled the recipe... they were that good!
