75 Reviews of Healthy Bean Soup With Kale

From: yogi

On Apr 22, 2003

Excellent soup! The blended bean/broth mixture makes this nice and thick and the spices, onion, and garlic give it so much flavor. Just perfect!! You caught my eye with the health benefits of lutein in the tomato, but this is soooo delicious too. And kale is in the cabbage family which makes it a cancer preventative. One serving has all the adult daily requirement of vitamins A & C! Very easy to put together. I used great northern beans, and only one can because that's all I had. Topped it with a dash of cayenne and Nutritional Yeast 'Parmesan' Nutritional Yeast 'Parmesan'. Thanks for my fabulous lunch today, Barbara!

We used the vegetable broth and 3 cans of the new Rotel "bold" Italian diced tomatoes which have green chiles and Italian spices in them. This gave it a really nice kick without being too hot. This will made often at our house.

Extremely tasty soup! It doesn't taste healthy at all! I added about a half cup of uncooked ditalini pasta, making it like a minestrone. Fabulous! I served it with crunchy garlic bread made from Garden Herb Bread (Garden Herb Bread (For the Bread Machine)). This is one I will definitely be making again!

Mama Mia - this is excellent! I used the cannellini beans, a handfull of fresh herbs (basil, oregano, thyme),chopped, and added some crushed red pepper flakes to kick it up a notch. Wow! Everyone loved this. I didn't tell the family how healthy it is.

Nice flavor! I did add a dash of crushed red pepper for a kick. Considering how healthy this is, it is five star! Balanced meal in a bowl!

This recipe is very similar to 57691 by Gil2. That recipe calls for 1 tsp dried thyme and 1 tsp dried rosemary which I used in this recipe instead of the Italian Seasoning. The blender mixing step makes this soup creamy without adding cream. This soup is really good and so healthy.

Yummyyyy! Cooked up some black eyed beans and used swiss chard. Great comfort soup for these dreary, windy, cold days.

Delicious soup, even for the folks in the family who claim not to like kale. It's very flavorful and quick to put together and makes so much that I can freeze some for another meal.

What a surprisingly delicious recipe! I love kale and this a perfect way to use it. Not a fan of garlic or Italian seasoning, so I omitted both. I enjoy making soup and this has become a favorite. I made it last week and already had a request to make it again, so I made it again for dinner last night.
