Fabulous dish! Everything about this was great - the ease of prep, the clear and accurate instructions, the color and look of the finished dish, and the wonderful taste. Even the amount of heat was perfect - very spicy, enough to clear those sinuses, but not enough to overpower the rest of the ingredients. I did use the full tsp of hot sauce as well as a whole chili pepper (which I partially seeded). Thanks - a real winner!

This was great! I scaled it down to 2 servings, and instead of the tomato/tomato sauce/water, I used a can of petite diced tomatoes w/ the liquid and I thought it turned out wonderful! Very tasty.

These were fantastic... we have had them in Texas and these are the real thing. I followed exactly except that I used 4 eggs. I served them on an oversize plate with a Mexican Rice, Unfried Refried Beans "Unfried Refried Beans" and Corn Tortillas on the side. The seasoning was perfection to me though DH added a bit more tabasco to his. This recipe is not just a keeper its going right in my Zaar Stars Cook Book. Thank you so much for sharing it ~

Neither DH or I had ever had this dish though I've heard about it often. I knew it would be something I would like but was a little worried about DH's reaction. Shouldn't have bothered to worry, DH and I both loved this! So much flavor!! And it was so easy to make. I used 1/2 jalapeno and served it over toast. What a great change for breakfast!!

I have never prepared, or even tasted, this dish before, but made it this evening for dinner for my children and myself. I have eight children so I doubled the recipe. Some of my children don't care for 'fried' eggs, so I only poached five in the sauce, and made a pan of scramblers with the rest. I also added shredded cheddar cheese on top. They are now eating the extra sauce with chips and asking to have this again tomorrow (even the one who curled her lips up and said "UGH!" when reading the recipe)! Thanks!

Very good. I really liked this method of cooking the eggs. I doubled the dish and made it for 7 people. It was very easy to control the doneness of the eggs (easy, medium, hard, etc.). Everyone really enjoyed it and only one dirty pot

This was very tasty! I used 2 ahaheim chilis instead of the green pepper and left out the jalapeno. I took the tip from Hot LZ and subbed a can of diced tomatoes for the tomato/tomato sauce/water. I did find that I needed to add just a couple of tbsps of water as the sauce was very thick. I fried up a couple of corn tortillas, topped them with homemade refried beans & shredded cheddar, then topped that with the huevos rancheros. Delicious! Thank you!!
