EXCELLENT way to use figs. I use a blender to "mash" my figs. And, I only use 1 1/2 cups sugar in this recipe and add about 1/2 box of surejel, as it's more like a "topping" rather than a jelly without it. I did Raspberry last night and it tastes like the inside of a jelly donut! Blackberry is next.

A friend of mine has a large fig plant so I decided to try this. It set up very nice, just like preserves, wasn't runny at all and we couldn't taste the figs. The little seeds made it look and feel like there were strawberries in it. My friends love it, as for me, well...It tasted more like thick strawberry Jello gelatin rather than real preserves, I asked one friend what it tasted like and he said Kool-Aid, I said close, then he guessed Jello. It is a good way to use up extra figs, I bet it is a big hit with kids.

I agree with Stephie Biggs, this is excellent. I mashed my figs in the cooking pot with a potato masher. I added the full amount of sugar along with the strawberry gelatin. Mine set very nicely. They are a beautiful red and the flavor is great. You are right no one would ever guess they were made with figs. My yield was 4 8-ounce jars

My family has used this same recipe for about 30 years. I also use replace 1/2 the regular jellow w/ the sugar free...doesn't affect the taste, texture, or cooking time! I have made one batch w/all sugar free jello & it turned out fine. Gotta love it!
