Hi Mom! I made this dip the other day and since my guests "hoovered" it in about 20 seconds, I'd say it was a huge success! My artichoke hearts weren't marinated, so I added a dollop of extra-virgin olive oil, cracked pepper and green Tabasco . Two thumbs up!

I used fresh spinach and doubled the mozzarella in this recipe. Pulverizing the spinach in the food processor gave this dip a brighter green color than I had expected, but the flavor was great. The garlic and marinated artichokes really complement each other. I served this with slices of toasted baguette, and had an empty dish at the end of the evening. I have used several other artichoke dip recipes, but this was tops.

This is a really good receipe! I doubled it for a huge party that I had. My suggestion for doubling would be to add some heavy whipping cream, maybe 1/4 cup. This will thin it out a little. It's very, very thick when doubled.

Houston's makes the absolute BEST spinach artichoke dip. This version is very close to the theirs. I doubled the recipe for our superbowl crowd but made minor changes to do so. I didn't have enough of the garlic chive cream cheese so I used 8 oz of it and 8 oz of plain. I used 4 oz mozzerella and 4 oz of pepper jack cheese. I also used 4 or 5 cloves of garlic but that is because we REALLY like garlic. I will never ever make another spinach artichoke dip. This one has won my heart (and my tummy!) :o)

This has become quite a staple in our entertaining - thanks for the recipe! I usually just use 1 egg to get a thicker consistency; but other than that, it's perfect how it is!

This was outstanding. Not being able to resist, I roasted the garlic beforehand and was pretty generous in adding it to the dip. The best S-A dip I've had.

Thank you for posting a fabulous recipe! I made this for a recent dinner gathering. The four of us plowed through the dip, eating almost all of it (a full recipe)! Even my husband, who turns up his nose at most vegetables, especially spinach, tried it and liked it. This is now on my list of dishes for my next holiday party (and I am very picky about what I serve), although I'm clearly going to have to make an absolutely huge batch of it.

Sorry, but this recipe didn't 'do it' for me. I love spinach artichoke dip, but this one (even after adding milk to thin it out) was dry and I think the spinach overpowered everything else, including the marinated artichokes. I tried to remedy that with hot sauce, garlic salt and black pepper, which helped. I also think that blending it in a food processor kind of killed it texturally. I'm sorry but I'm going to keep looking for my 'go-to' spinach artichoke dip recipe. I am giving it 4 stars however, because my husband loved it!
