This is excellent! I doubled the recipe, and had a little left over. So I threw it in the food processor and used it for pizza sauce! With some mozzarella cheese and a sprinkle of parmesan, and some crumbled feta(goat), and a few basil leaves on top, and a drizzle of olive oil, I had a wonderful Italian-style pizza. The eggplant gives the sauce a little tang, it was really good.

Mm!mm! I added extra tomatoes, and gave the eggplant a head start in the frying pan, 'cause if there is anything I can't stand it's al-dente eggplant. I also used three big but pretty mild Jalapeno peppers as I can't eat green peppers. This is so delicious, the ultimate comfort food.

I have a house full of guests for the Fourth and a garden bursting at the seams. We had this last night and it was a delicious vegetarian meal. I added a touch of salt. The herbs accentuated the flavors of the fresh vegetables. I served it over rice. So delicious. Thanks MEP.

I had all the ingredients, so made this and it turned out wonderful. I added about 2 tbls. red wine, and about 1/4 cup parsley. I used fresh tomatoes instead of canned. Thanks Mepster!

Am not a huge fan of ratatouille but BF is so he asked me to find a recipe so he could make it. Well I thought this recipe was terrific! Like some other reviewers we served it over rice with a sprinkling of parmesan and hot sauce. I asked BF to include the tomato paste, though I'm not sure that reduced the acidity of the tomato or not. We love tomato anyway, so that's okay! Makes 4 very generous servings. Thank you Mepster.

I loved it, but I like little bit more flavor and heat,so I added 0.5 tsp of red pepper flakes and 1 tsp of herbs de provence. I also used red and yellow bell peppers for more colorful look and a 0.5 cup of fresh basil ( I was cleaning out my fridge and needed to use it up). I also decreased amount of crushed tomatoes to 1 cup. It was delicious, made a nice side dish to a rotisserie chicken. Thank you, I will make it again.

i would like there to be some stronger spices in it though — it tasted quite a bit like spaghetti sauce

We love Ratatouille. This is a very good recipe that is easy to make. I didn't add the green pepper, but, did add a small amount of cooked pasta & a little salt to the recipe. Good served with some Parmesan cheese on top, Delicious.

I have made this several times with no changes to the recipe. It was very easy to make and I will make it again. DS likes it over pasta with Feta Cheese. Thanks for posting.

Bea-utiful! Can you believe I had every ingredient but the pepper?! I've run out. Tossed in just a little cayenne instead, that worked well. Took a page from another reviewer, added sea salt and served over rice. But I cooked the rice with some kale and lemon juice. Really nice from the Girl-Who-LOVES-Vegetables
