We were all really impressed with how much we liked these! I figured I wouldn't be crazy about the filling since it is mainly shortening, but it was really good. Maybe because of the evaporated milk?? They cookie/cake part is a little sticky because they are so moist, so I recommend not stacking them. If you do, I would try putting waxed paper between each layer. This new addiction is very good at room temperature or chilled. We are toying with the idea of pouring a thin layer of ganache over them and making them taste more like a Ho-Ho or Swiss Cake Roll.

Surprisingly good! Didn't think I would like them, but they disappeared quickly. Will try a buttercream filling next time. Thnx for posting, Tonkcats.

Truly DECADENT cookies! These were deliciously moist and the cream in the middle was just right for us. I did bake the cookies for 1 minute longer than stated in the recipe to make sure that they set in the middle. Great, easy recipe when you've got those chocolate cravings!

Made up only 1/2 recipe. I used a small ice cream scoop to make the cookies and they really turned out uniform to be matched later with the filling I cooked them 6 min. in my convection oven and they were perfect. They were especially good to me since they are not too sweet. Next time I will make up the full recipe and change the filling to 1/2 crisco/1/2 butter & a touch of vanilla. The children love them, not only because they are good, but they are individually packaged like a special treat. .
