I am on weight watchers now and have just made this soup. AWESOME!!! Very filling. It is 2 points for a 1 cup serving. The Progresso Minestrone soup is the best. Also, the corn should be white corn because the yellow corn has more starch. Enjoy

This soup is sooo unbelievably YUMMY!!! Even my dad, whom is a die-hard "Meat and potatoes" man, loves this soup. Now that he is living on his own, he is absolutely delighted that it is so easy to make, as he is not one for recipes that require more than a few steps. YUMMY. I had my doubts even with the reviews. I was unsure whether I was suppose to drain the mixed vegies and the corn. I didn't (added it juice and all) and it worked out — it's self evident after you begin to mix but thought it could be more clear in the directions.

I am not on weight watchers-- but I love this soup!! I have made it about a hundred times since I found this recipe and I have passed it on even more! This recipe is wonderful the way it is, and it's easy to change for variety. My whole family eats this-- including a picky 2 year old! I usually add salt, pepper and tabasco, plus drain the vegetables and add a can of stock for more of a homemade flavor. I have also added onions, garlic or leftovers-- cooked chicken, hamburger or vegetables. I have used kidney beans instead of black beans. Thanks for the EASY and FABULOUS recipe!!

This is so easy and versatile. I have made it several times now for an easy nutritious lunch. I make with frozen veggies for added nutrition. For those not on weight watchers I totally reccommend topping with chopped avocado before serving, it really adds a burst of flavor.

I made this soup with frozen white corn and frozen mixed vegetables. It was very fast and easy to prepare and had a very good flavor. I did add a can of beef broth to it. I reheated a cup of the soup and added some lean, diced ham to it. That was very good. I will be making this recipe again for noon meals. I took it to work and had it with some good rye bread. Very tasty way to get more vegetables into one's diet.

The best!! I keep a container of this in my fridge most of the time. Just ladle out a bowl and put it in the microwave - so much better (and less salty) than regular canned soups. Also a good recipe to help clean out the pantry.

Posted this recipe this morning with some variations....before I saw this post. In fairness, I deleted my post. This soup is EXCELLENT AS POSTED....but I have been adding one can Swanson's beef broth, one pound cooked ground beef, 2 bay leaves, and a good pinch of cayenne pepper.

I am delighted to find this recipe. It is really amazing how the flavors come together to create a rich and yet healthy soup. I added some cooked chicken for some extra protein and it turned out great. I planned to eat this all week, but my family loved it too so now it's gone. I'm on my way to the store for more cans for the second batch. Thanks for a recipe that will be used many times.
