These were very good. Tasted just like the enchiladas I usually make but with half of the work! I was delighted. For those of us who like kick, just use spicy enchilada sauce. You can also sprinkle tops with jalapenos just before baking. I made only 10, and was able to squeeze them all into a 9x9 wich mde for easier clean up. Also, for those using ground beef, use 2 pounds or 2 1/2 if your real meat lovers like us

Awesome flavor and easy to make, my kind of meal! I used low fat cottage cheese, fat free sour cream and a low fat cheese blend and we didn't miss a thing. They were full of flavor without being full of fat and calories! This will definitely be our enchilada recipe of choice from here on out! Thanks!

These are amazing! We had a very busy day so I assembled them in the morning and baked them right before we ate. It worked out great! This is a perfect make ahead meal. My only change was that I used whole wheat flour torillas, and I made my enchilada sauce using Zaar Red Enchilada Sauce. Thank you for a great recipe!

These are very good! The amount of meat was not specified, so I used one pound of ground beef. I also added a small can of diced green chiles to the meat mixture. I used whole wheat low carb fajita size tortillas. I got a total of 10 filled enchiladas with the amount of filling, which fit nicely in a 9 x 13 pan. Would definitely make again.

Wow! These are rich! I made half the recipe with chicken and half with ground sirloin....loved them equally. I used white corn tortillas and my own homemade sauce. Will definitely add this to my Mexican repetoire. Thank you for sharing this unique recipe!

I made these tonight and we really liked them. I used my hand blender to break up the cottage cheese so it wouldn't be lumpy and also used canned chicken. They turned out great! I had more cheese filling than I needed so made a few tortillas with just the cheese filling and shredded cheese and no enchilada sauce. The kids especially liked this version. Thanks for a great recipe with lots of healthy protein!

I love enchiladas and these are soooo good! I made a few changes to suit my tastes: used 1 can black beans instead of meat to make it vegetarian, homemade taco seasoning (#66591), 1/2 tsp salt, lots of extra black pepper, and also low-fat cottage cheese & sour cream. I used 6-inch flour tortillas and cheddar/jack blend (instead of one or the other). My only problem was that they were very runny. Thanks so much for the great recipe HeliWif!!
