This recipe is fantastic. I made this for dinner last night. I didn't have lime juice so I made it without. I made a couple of alterations to suit my preference. I didn't use skewers because I'm not a fan of them. Also, after broiling the chicken, I heated the extra sauce in a sauce pan and place the chicken strip in the saucepan. I served it over hot rice. It was great. Thank you for sharing this recipe.

    This was great! I made a couple of changes with crunchy peanut butter and coconut cream instead of milk. I served the chicken in rice wrappers with chopped fresh mint, rice, and the AMAZING peanut sauce!! Thanks Chia, we really liked this.

    Why the heck doesn't thing go up to 10 stars?!?!?! Yep, you read it right! This recipe warrants 10 stars. Even though I made myself something entirely different for dinner than I did for my husband, I couldn't help but eat some of this. He raved and raved (and so did I). At first I was a little concerned once I started mixing the ingredients for the sauce, but after about 20 minutes of being refridgerated, I had to dip my finger in and taste it. Boy, it blew me away. The combination of the coconut, PB, and red peper were amazing. You can taste each ingredient separately. At first you taste the PB, then within a few seconds you taste the coconut and a few seconds after that the red peper hits. Then, you get the full flavor of it all. I made instant rice and put the chicken on top of it. I heated up some of the sauce and drizzled it over the chicken and rice. I saved some cold sauce in case DH wanted to dip the chicken. Both our meals were devoured in litterally 5 minutes (took me 2 hours total cooking for both meals - includes marinading time). LOVE LOVE LOVE this recipe! Thanks again Chia!

    YUMMY! I've had this dish in thai restaurants before and loved it, but had no idea how to prepare it at home. Now I do! I will absolutely be making this again. Note - Recipe is NOT kidding when it says to soak those wooden skewers. I didn't soak them for the full 30 minutes and they started to burn and smoke. Next time I'll be more careful .

    I've always wondered how to make a sauce like this close to my favorite Asian restaurant's, and this is it! I used it as a dipping sauce after sauteeing the chicken in sesame oil.

    Holy Hannah, did I love this recipe! And it's easy, too! I used a bit of Thai red curry paste instead of red pepper and used soy nut butter instead of PB because that's all I had. Also used grated ginger in a jar and bottled lime juice. I marinated the meat in ALL of the sauce, then scraped off as much as I could, boiled it in a sauce pan for about 3 minutes and let it cool while we cooked the skewers on the BBQ grill. I'm still eating the leftovers (I hid them from Mr. Claus) and it's my new favorite lunch: Spread peanut sauce on a WW tortilla, top with chicken and a big handful of fresh greens, fold it like a burrito, and Yum! (Oh, heck! Now I'm hungry again just thinking about it!) Thanks, Chia!

    IN-CREDIBLE. I wanted to make this for my main meal, so I followed everything to the T, except I marinate whole chicken thighs (about 6, I think), broiled them for about six minutes, then baked at 400ยบ for about 10 minutes. They were PERFECT. I have one left in the fridge, and I'm putting off eating it as long as I can.. I'll be so sad when they're all gone! Guess I'll just have to make more. Anyway, thank you for this recipe; it's amazing!

    We loved this! Instead of broiling, we grilled to enjoy the beautiful weather. My husband said, "This is the best chicken-on-a-stick I've ever eaten!"

    This was excellent! I made it exactly as directed...except I did double the sauce as well. It was great with the chicken over rice. I will definitely be putting this in my favorites cookbook! Thanks!

    Delicious!! I doubled the sauce, and had way too much, so I don't think I will next time. Maybe 1-1/2 times...but I loved it. It took much longer to cook than the time posted, and I didn't realize I had to marinate it (cuz the time is not listed in the total time to make), so I only marinated about 1/2 hour. Can't wait to try this on the grill!
