This is my favourite sidedish that uses kale. I leave out the melted butter, though, as I don't think it's needed. It can be a little bit stressful because of juggling the different pots and pans but it's well worth it.

I used a savoy cabbage in this as I couldn't get kale. It certainly makes a great mash. Will make it again as I think the kale would make a difference. When I make it with the cabbage again, as I will make it again I am going to put in some crispy bacon.

Very tasty dish! We used almond milk instead of regular milk and it came out just great! We also added Earth Balance buttery spread before serving, but not very much (and we didn't melt it). Thanks for posting!

We both really enjoyed this recipe as part of our Irish leg of our Voyage around the British Isles. Very traditional and very tasty. Excellent recipe and very authentic!

Good recipe, but real colcannon should contain chopped ham, or chopped bacon.
