A very flexible recipe - and that's what I like. I've made this more than a dozen times, and have had more or less of the key ingredients, and it has still worked a treat. Don't be too fussed about all the trimmin's - it goes fine with or without. A previous comment about the puree being optional I don't really agree with - I've tried it both ways and the puree is definitely worth the extra effort.

Made this for dinner last night with a salad and cheese bread. Very easy to make. Did not puree the soup and just left potatoes whole. Diced potatoes instead of slicing. Did not garnish as I didn't have either on hand, but will garnish next time as the bacon would compliment very nicely.

This recipe was so good! And I tweaked it a little, instead of butter I cooked 3 pieces of bacon and removed them (for later) and then cooked the leeks. just like a chowder recipe usually calls for. it gives it a smoky taste. Thanks for the recipe, it is now a winter staple!

I made this recipe last week and loved it. I didn't have all the spices on hand, but even without the celery seeds and thyme, the soup was wonderful. With lots of leftovers (I used a full 5 lbs of potatoes), I'll have warm and comforting lunches for several weeks! Thanks for the great recipe!

I followed your instructions exactly and the result was a wonderful and comforting soup. This is a very easy soup to make, I wouldn't change a thing. Thank you so much Stephanie Colado for sharing this great soup.

Great soup! Served at St. Pat's party~ Makes ALOT so it's great for a party. I took like my soup to be "chunky" so I pureed about 1/2 of the soup and left the rest whole! EVERYONE loved it! Definately a keeper. DELICIOUS!!!

Yummy soup, great recipe. I left out 1/2 a cup of stock, and skipped the thickening portion of the recipe. I left the peels on my potatoes for extra texture and used my emersion blender to blend it all up (but left some chunks as well). Nice, flavorful, rustic soup. Definite "make again".

Loved it!!!!!!!! I made it last weekend and am making it again this weekend for my daughter who is home from college. I had one small bowl left that she tried as soon as she got home and asked for more. I made exactly as you said and it was delicious.

I think that this recipe is great for a basic potatoe leek soup. I always naturally opt for thickening with a simple "roux" of just butter and flour and milk. I think that This is a great recipe to build additional flavors on. Next time I would add one more leek, a small one. But it definetly did the trick. I also fed it to my 8 month old for lunch and he loved it!
