Fantastic lemon curd, and lower in fat than other recipes calling for all egg yolk. This worked well even though I used 3/4 c splenda (plus 1/4 c sugar for volume) and light butter. The directions are spot on and easy to follow, and the taste is balanced for sweet and sour. A real treat to complement the gingerbread I made today-- thanks for posting this gem!

This is fabulous and so easy to make! I can't believe that I've been spending so much to buy this in the stores when it is so inexpensive and easy to make this tasty version. I halved the recipe and it turned out great. It was delicious spread on scones.

I've never had lemon curd before and I was going to use it in a recipe and changed my mind about it, only now I had all the lemons. And I thought, why not make it anyway? See if it's good. This is like eating lemon meringue pie filling. And I love lemon meringue. I put it in tarts (finally) but you could eat this on toast (a little odd, but not bad), pancakes (going to try that tomorrow) puff pastry... or, my favorite, eat it plain with a spoon! Thanks for a wonderful, easy recipe!

I tried a different lemon curd recipe on zaar...but it just didn't work to fill my layer cake. This recipe turned out perfect! Great flavor, great texture, great recipe!

Purrrrfect recipe! Tart & sweet - I used this in Lemon Tiramisu with fab results. I did not bother to strain as my curd was nice & smooth - thereby leaving the indiscernible bits of zest to further enrich the flavor. DH loves lemon desserts & it was diificult to kepp him from grabbing spoonfuls & running out of kitchen with it. Thank you Bev this is a keeper!
