I used this recipe as a base for 250 people at a fundraising event. The feedback was incredibly positive. "Just the right amount of spice and didn't mask the good flavor." "This chili rocks!" "I can't believe this chili didn't win the contest - fabulous." I used ground beef instead of stew meat because that was donated by a beef packing company and it was still great.

Wonderful! I am not a chili person and have only tried cooking it about 3 times so I looked up this recipe when our church had it's Chili cook off. When I signed up my husband said "you don't make chili", but I showed him and walk off with 1st. place. I did not use the chipolie peppers and used coarse ground lamb and pork for the meat.

Talk about something that will warm you from the inside out! Yes, this is hot, but the blend of spices is just about perfect. You don't really taste the fennel and cocoa, but they do add a whole 'nother dimension to the flavor. Personally I would prefer it just a bit less hot, but my family said I should only make chili from this recipe from now on.

I have tried several chilli recipes, and found this one to be the very best for our tastes. I did omit the Chipotles and cut the chili powder in 1/2 to reduce the heat, but overall this is the most balanced and flavorful chili I've ever made!

very good............ I was very pleased with this recipe,looks like a lot of work but it isn't.Well worth making as I did,on a cold rainy day. Never used cocoa in chili but this works.Thanks so much!This is now my only chili recipe.BF liked it very much.

We all loved this chili, my ds said it was the best chili I ever made, even though I thought it was a little hot/spicy for my taste. Next time I think I'll skip one of the cans of chili peppers and/or decrease the amount of chili powder and serve it with shredded cheddar cheese and sour cream. We served this hearty hot chili with cornbread and had ice-cream cake for desert for a no-work delicious dinner. Thanks onlyme for posting this chili dish that we all enjoyed and will be making again.

This excellent recipe is a keeper! I made it for the first time on Super Bowl Sunday and it was completely devoured by half time. The recipe is very simple and has an spicy kick that makes you crave for more. I only used half of the chipotle peppers & a touch of pepper to curb its' bite, also I substituted the beef stew meat for 1 lb. hot pork sausage & 1 lb hamburger. The culmination of seasonings is superb, especially the fennel!

We both enjoyed this chili a lot! I didn't have 8 hours, so I just cooked it on the stove for 2 1/2 hours on simmer, and it was still great. I also left out the chipotle, just 'cause I didn't have any on hand.

This recipe was great. My husband liked it. I didn't put all the hot stuff in because of the kids though. I also got away with putting way more beans than meat!!! The addition of fennel is a good idea! Good for digestion.
