Wow-what a terrific flavor from such simple ingredients! I didn't have any shallots-so I used a couple of small red onions. Unbelievablely sweet and flavorful. Thank you for posting this-it'll be used frequently. Mickie

Oh, WOW! I made this last night, and I ate almost the entire dish myself!! I admit, I didn't measure, and I think I may have added a bit more of each ingredient called for, and also added some garlic powder. Also, I only had regular onions on hand, so I cut up about 1 1/2 small ones. YUMMY!! ~Manda

Loved the flavor in this! I was worried when I saw how much shallot was cut that the "onion" flavor might be a bit strong, but after cooking, it was nicely balanced. I did bake mine about 5 minutes more, for although the squash and shallots were cooked through at 20 minutes, I wanted to get a bit of caramelization for the best flavor. The amount of brown sugar was just right as well...it didn't seem like a whole lot being stirred in, but after cooking, gives just a hint of sweetness without the flavor being more like- well, candied yams or something similar. I will definitely make this again. Thanks for posting!

Made this several weeks ago and it is an absolute masterpiece. Wonderful!! The shallots are so sweet when roasted and I just loved the squash. We both inhaled this dish, too! Will make this many times!

Excellent flavor, tender, easy, simply delicious. I omitted the sugar by mistake and did not miss it. Adding to my Best of Zaar cookbook...a true winner here.

I used the half splenda half brown sugar mix. This was fantastic and definitely worth all the effort of peeling that pesky squash!

Don't pass this one up...by far the best butternut recipe I have made in years. You should make this a staple at Thanksgiving. My husband who will not eat veggies loved this. That's a compliment in itself. Enjoy.

Great! I used red onions because that's what I had and drizzled a little honey on top instead of brown sugar.

Absolutely loved it. Didn't have the brown sugar so I used real maple syrup. I also used onions instead of shallots. Think I'll make it again tonight....it was that good.
