GREAT - Easy to make - fast - delicious. What do you need more? The coating with cornflakes, parmesan and cayenne is awesome. First, it sticks to the fish, second, it is crunchy, and last it is spicy enough. To bake the fish is the easiest way to get a still moist, but flakey fish. I have used tilapia fillets and it was fantastic. I have tried this recipe also cold and it was still good. Therefore it should be possible to make fish ahead (for guests) and to reheat it only before serving. Because there is no oil in the recipe, the fish crust is dry and not oily. And it is healthy too. I love fish and this recipe is a keeper. Try it, you will love it.

This is a great recipe. It's easy, fast, and tastes great. I made this using Talapia and cornflour in place of flour. I also added some garlic powder to the cornflake/parmesan cheese mix. I'll definitely make these again.

This is one fantastic recipe! I made a few alterations, as I used catfish. I also added hot sauce to the egg wash because I didn't have any cayenne pepper on hand. I used cornflakes but I also added seasoned breadcrumbs to them and used garlic pepper in the flour mix. The results were amazing, great crunch and texture and the flavor was out of this world!!! Thanks for sharing this wonderful recipe with us!

This recipe turned out great. I did not add the parmesan cheese to the coating, but I will next time. I used halibut which was pretty thick, so I lowered the oven temp. to 400 degrees after it started become crispy. Very good and I'll make it again. Thanks so much.

I absolutely loved this recipe! I love fried fish, but I am constantly watching what I eat so actual frying is a concept I abandoned long ago. This recipe more than makes up for it! I used cod fillets and egg whites instead of egg and it still came out fantastic. The fish was crispy, flaky and, most importantly, not dry. Even my fish hating kids tasted the fish and proclaimed it not bad. I will be making this recipe again many times. Thank you so much for sharing it.

I made this recipe tonight. Instead of baking the fish I cooked it in a nonstick pan with a touch of cooking spray. I think it is a really great recipe. It has all the flavor of fried fish (but of course much healthier). Thanks!

This fish is excellent! I've been using this recipe for about 4 years now. It's the recipe that got my family to love eating fish. I started off with sole and have used it on cod, basa, and pollock too. The fish always turns out great! And to think we used to eat those frozen boxed fish sticks — yuk!!

Delicious crispy fish. Instead of the cornflakes (which I didn't have) I used corn chex and really liked the result. For the fish I used catfish which was fairly thick cooking it about 20 minutes (turning it half way through) instead of the time indicated. Thanks for sharing this keeper.

This is a wonderful way to cook fish, it is so healthy and moist. Because my husband can't have any fat or dairy in his diet I replaced the egg (and water) with two egg whites, lightly beaten and omitted the parmesan. I also didn't use the cooking spray but it is still wonderful even with the changes. Thanks so much Kim.

This was very good. My husband even ate it cold! The cornflakes keep it nice and crispy. I, too, used tilapia, and it turned out great. Insteand of cayenne I used paprika. Not being sure of the amount of spice involved, I didn't add any extra, but next time I will, as I feel it needs a little extra kick. Does not reheat well in the microwave, but very few fish do. Thanks for a great recipe that I will definitely make again!
