Great recipe. I used 2 whole eggs instead of the 4 egg whites and it came out fine. My children had them with lemon and sugar while we had some butter mashed with a little honey. Absolutely delicious...we will be having these again shortly!

    I took the basic recipe and adapted it to fit my weight-loss plan (Lean for Life) by adding another 1/4 of oatmeal and using 2 whole eggs, rather than the four egg whites. I also added 6 packets of Splenda (major sweet tooth)and about 1/2 teaspoon of cardamom, my current spice of choice. They were wonderful! In fact,I immediately made another batch, double this time, so I could put them in the freezer and microwave them if I need a quick breakfast. For the Lean for Life plan, one-third of the recipe as I made it counts as one grain portion and one protein portion. Thanks for posting! It's not so easy to come by quick, healthy recipes.

    This was so easy, so filling and so yummy! My daughter loved them so much yesterday, she asked me to make them again today. Today, I added 1/4 of a banana to the mix before blending it, and stirred in about 1/8 cup of blueberries to the mixed batter. It was really tasty. Great with maple syrup. Thanks so much for this recipe, this is a new breakfast staple in our house now.

    I love these. Since I read the recipe last week, I think I've made them every morning for myself. Things I add: 2Tbsp milled flax seed, 2tsp Splenda, 1/4tsp cinnamon, a pinch of nutmeg. I eat these with Vermont sugar free syrup - YUM!

    These pancakes are great healthy and quite tasty substitutes for those with a pancake craving, but not so desirous of all the super-high carb-count in traditional pancakes. For those on a "Zone" diet (or "way of life") program, these make excellent Zone snacks or meals, depending on how many are eaten at a given meal. I agree with the suggestions many others have posted about adding a bit of Splenda, cinnamon — and I also added a few drops of maple extract and almond extract instead of vanilla (because I am a huge maple fan!). Maple extract is a great way for those with a maple weakness (such as myself) to get that tasty maple flavor without the excess carbohydrates. I tweaked the number of egg whites, because I only had extra-large eggs, so I just added three egg whites, which seemed plenty. I also decided to do a mix of half-rolled oats and half steel-cut oats, as steel cut oats are much higher in fiber and recommended for those following the Zone diet — and they also add a bit of texture to the final pancake, which I like. I too added psyllium husks (thanks for the recommendation!) and wee dash of baking soda. Next time I make them, I'm going to try added a few sliced peaches or apples to the blender for some "fruit cottage cheese" pancakes and see how that works. I had a bit of trouble the first batch on the griddle, as I think the pan was too hot and I didn't have enough coating on the pan. So, careful of that — because the batter is basically just egg and cottage cheese, it will cook quickly, and they're a bit hard to flip. I reckon one of those silicon spatulas would be handy for these. Great recipe, though ... I love them! They're so easy to make — and perfect for refrigerating for a quick brekkie on the go.     Had these for dinner tonight topped with vanilla yogurt, chopped apples, and a sprinkling of toasted walnuts. Yum! I doubled the recipe and used 4 eggs rather than 8 whites. I also added 1 tsp. cinnamon, 1/2 tsp. nutmeg, 1/2 tsp. cloves, 1/4 tsp. salt, 1/2 tsp. baking powder, 1 tsp. Splenda, and 1/4 cup of vanilla flavored whey protein powder. I used a hand blender to buzz everything together until smooth, and dropped the batter by 1/3 cupfuls onto my griddle. I got 10 4-inch pancakes total.

    I've been dying to try these but finally got around to it this morning for breakfast. First, the texture is very different from a regular pancake, but this of course is to be expected; there is simply no way to duplicate the texture with completely different ingredients. The taste by itself was similar to plain oatmeal, which I don't particularly care for, so the second round of cakes got a sprinkling of cinnamon on the them before flipping. This we really enjoyed! Added a bit of butter and syrup as if they were run-of-the-mill pancakes, and these were a sure winner. My 2-yr-old ate an entire one herself with no toppings at all, just the cinnamon! I will add fresh blueberries next time and I can't imagine how yummy they will be. Add all of that to how easy these were to make, and you've got yourself a nice five star recipe. THANKS for sharing!!

    These were good. I halved the recipe and used one whole egg, and made 2 small pancakes out of it just for me. I think I will probably cook them a little longer next time, as they weren't quite all the way done in the middle. I will probably also add cinnamon. All in all, a good recipe that I will make again!

    These are very good, very healthy pancakes. The first time I made them I followed the recipe to a T and my only thought was that they needed a bit of sugar or something, so the second time I added a few spoons of granular splenda and, out of sheer laziness, used two whole eggs instead of 4 whites. They were just as yummy, if not better. I could go either way with the whole eggs/egg whites, but I think the sugar/sweetner is a must. The flavour is lacking slightly otherwise. All in all a really good, healthy recipe though. It's so nice to be able to have pancakes even though I'm on a diet! AND the BF liked them too, which is a small miracle.

    Yum! These were so quick and easy to make. I did use two whole eggs instead of 4 egg whites and added a tsp of sugar. Thanks for the good and healthy recipe.
