Hi, Redallnite! My Grandma would always fix this for breakfast when we'd spend the night with her. (Except we called it Rice and Eggs! lol) Now I fix extra rice just so we can have a quick, easy breakfast the next day. Sometimes I add a little shredded cheddar cheese and minced green onion tops to the mix. It's yummy!

This is a great comfort food! Growing up without a lot of money, the rice was used as an extender for many many many things in our house. Our family twist on the recipe is that rather than scrambling eggs into the rice, we would simply cook regular steamed rice, and then fry the eggs to a perfect over medium (over easy could work for this dish as well - even for the squeamish). Place the fried egg(s) atop the rice, and chop them up and mix thoroughly, so that the yolk flows through the rice, and you'll think you've died and gone to heaven. If you feel really daring, and want to experience it the way we did as I was growing up, you could add a dash of ketchup to the dish as well.... Great recipe! Glad to know I'm not the only one in this great big old world with "funny" tastes in confort food...

These were wonderful! I added some onions and actually used this as a side dish to a ham I threw in the crockpot!It made a delicious and filling meal. I wish there had been leftovers to mix up for breakfast the next morning but we licked the platter clean. lol Next time I might add a little garlic or something for a different flavor.

When I lived in Costa Rica, they made this for breakfast (just add in black beans) and called in "gallo pinto". We ate it nearly every morning!

Had some leftover fried rice from my local favorite Chinese restaurant. Mixed it with the eggs. Made the BEST scrambled eggs I've ever had. That's all that can be said. So simple, yet SO GOOD!

Really good. I added a little onion to mine. Kind of tasted like stir fry rice for breakfast. Enjoyed it for a change of pace.

I made this last night and it was really good! I added a slice of white american cheese as the eggs were firming up. I may try other add ins but I was pretty impressed with the basic dish. Thank you!

My great grandmother and grandmother used to make this for breakfast when there was left-over rice. I always add a few sliced mushrooms, onion, and garlic. My family loves it. Glad to see this posted.

This was one of my favorite meals when I was a child. I cooked some rice just so I could make this dish. Very good and brought back warm comforting memories
