***Editing to Add: First off, let me say I've been making this soup for years, and my family loves it. But the last time I made it, I came to this copy instead of the one in my book, and the 2 TBSP on the basil and oregano can be very overwhelming. I thought it seemed like a lot, but I went ahead and threw it all in in a hurry. I had to scoop most of it off the top of the soup (thankfully, it all floated to the top). In my original copy, it's 1/2 TSP of each. Just wanted to add this for anyone that may be interested.*** Di, I love this soup! Made it last night... I made no substitutions, but I added 2 extra cups of beef broth,as this is a loaded(with good stuff) soup, and we like good broth. And I used canned chopped tomatoes. The flavor of this soup is just incredible, and anyone that tries it falls immediately in love with it! Great served with green salad and crusty bread, for dipping, of course! Very easy to make, and smells so good while simmering, too. Anyone that likes soup should definitely give this one a go! And it deserves way more than 5 stars. too. Thanks for posting!

I don't think words can describe how wonderful this soap is. I served it to my hubby and my mom in law and they could not stop raving about it. I did have to make a few substitutes: I did not have onions or red wine on hand, so I ommited them, but they were not missed. Instead of 2 tomatoes I used 1 can of crushed tomatoes, and I also threw in some mushrooms. I garnished it with parsley. YU-UM! Mom in law said it was one of the best things she ever tasted. Wonderful full bodied soup! I followed recipe exactly except substituted 2 stalks of celery for the zucchini(family preference). Very similar to my version recipe # 20486 except I use chicken broth and spicy clamato juice instead of the beef broth and wine.. I used extra lean Itaian spicy turkey sausage to keep the fat content down. My sons gave it 5 1/2 stars. Will be enjoying this recipe many more times. Thanks NurseDi for another great recipe!

I made per instructions, except for adding extra garlic (we love the stuff...
and using canned tomatoes, zucchini & carrots. I also made in the slow cooker (after browning sausage) & let simmer all day, but waited until the last few minutes to add the tortellini. It was wonderful soup, full of flavor.

This recipe is slamming. The only change I make is to use fresh herbs when I have them on hand as opposed to the dried. Served with crusty Italian bread and freshly grated parmesan (Reggiano,) this is a hit every time. Even the pickiest eaters love it. Thanks Nurse Di!

Excellent soup for a cold, snowy day!! I omitted the green pepper but added celery, due to personal preference. Also used less basil and oregano, otherwise made as directed. This is a keeper!!!

Well NurseDi, you have done it again. This was amazing. I made this for dinner last night and I am still thinking about it today. It will be our dinner for tonight also. I cannot thank you enought for this fantastic recipe. I did make a couple of chages, but nothing too drastic to change the true taste of this wonderful dish. I used link sweet italian sausage. I first panfried the sausage whole, with a bit of water, lid covered, then removed lid and let water evaporate and browned the sausage. After it was browned, I set aside on a paper towel lined plate. Cooled it a bit and sliced into 1 inch pieces. Browned my veggies with a little olive oil. Added 2 additional cups beef broth, 1 can of diced tomatoes with garlic (instead of the 2 cups fresh) and garlic tomato sauce (can you tell that we like garlic?),the red wine, the sliced sausage and simmered for about an hour. I used used fresh three cheese tortellini, put in at the end of the hour and let simmer for another 5 minutes. And there was my fantastic dinner!! Served with a really good crusty french bread. My husband was inhaling this. And it really didn't take any time to prepare other than the hour for simmering. Thank you again NurseDi. What a hit!! Hugs, Susie.

This soup is soooo good! I did not add zucchini as my husband and I are not fans. He inhaled the soup - definately a keeper! Be sure to use good Parmesan, it makes a huge difference.

Absolutely delicious!! The only changes I made were to use celery instead of zucchini and a can of crushed tomatoes instead of the chopped due to personal tastes of a picky husband. Thanks for sharing!

Delicious,Yummy full bodied soup! My DH couldn't stop eating it and kept saying what a wonderful soup.I made it just like the recipe said, except I cut down the size of the recipe for the 2 of us. Though I did saute the zucchini, carrot and bell pepper for a few minutes that way It didn't take as long to cook. Also used Turkey Sausage, YUM, worked great. Love the combination of spices. That you for the delicious soup recipe.
