This was very good. I doubled the recipe and cooked it on a cookie sheet lined with parchment paper. I did not turn them; they got nice and brown (on the bottom too) and did not stick. Easy clean up.

    Kelly, this is a great way to cook chicken thighs. I used boneless, skinless thighs. The coating was crunchy and adhered well. The chicken meat was very moist and tender. Kudos for the idea of dipping in ranch dressing. It adds a lot to the flavor and moistness. More than satisfied my family of six. Thanks!!

    Wow, Keywee! What a super chicken recipe! I loved it but, more importantly, my WIFE loved it too. This is one of those rare recipes that she actually told me was excellent and she wants it again soon — believe me, that doesn't happen very often. *.* One feature that she liked was that the chicken is skinned before baking and it does not come out leathery, but rather, moist and juicy. I did implement the following minor changes: I "dusted" my chicken with regular flour a half hour prior to drenching and dredging which seals in the juices and keeps the coating from falling off. I also added 3/4 teaspoon of Kosher salt to the breadcrumb/cornmeal blend. The dressing I had was "peppercorn ranch" (from Save-A-Lot) which I think is even better than the traditional version. In the end, Perfection! I served your chicken with msjill111's Carrots and Onions ( Carrots and Onions ), and, my own home-made macaroni and cheese. Delicious, moist, juicy, tender chicken with great eye appeal to boot. Thank you so much for posting this fine recipe. pat

    Surprisingly moist for skinless chicken, the ranch dressing combined with the seasoned bread crumbs adds incredible flavor to the chicken. Easy to put together, and inexpensive, this recipe is one that should become a regular family favorite for anyone who tries it.

    This was fabulous! We all loved it. I used boneless, skinless thighs, but adhered to the cooking time in the recipe, and it was right on, very moist inside and crunchy on the outside. I'll lightly salt and pepper the chicken before dipping in the dressing next time, and I used Panko because I just prefer it. Even our daughter raved about it, stuck as she is on ranch dressing, and hates that we eat so much chicken at our house. And the possibilities! We're thinking bleu cheese, Green Goddess, and on and on! What a keeper, thanks so much for sharing this!

    Thank you for the great recipe.I omitted the corn meal and used asiago cheese instead of parmesan.Very moist chicken... coating browned nicely, very crispy.

    Delish. I used fat free ranch dressing with good results. The chicken was very moist and the coating nice & crunchy. Thank you KeyWee for the no brainer!

    The taste of these is wonderful, 5 star, but I had trouble keeping the their coats on, when I went to turn them I lost most of the coating. I followed the instruction exactly but was a little dissapointed with the coating. Next time I think I'll try baking them without turning them. The timing was perfect, cooked through. The coating left in the pan we scaped up and ate, it was very very good. DH really loved them, and we will make them again, thanks for sharing a good one.

    Okay...I'm giving this 5 stars even if I didn't read the directions and did it wrong. I left the skin on the thighs, but they turned out great and there were absolutely no leftovers! Great recipe, I'll be making these again...who knows, maybe next time I'll read that I'm supposed to remove the skin from the thighs!

    My entire loved these. This is probably the best way to make chicken thighs that will please the entire family. I love that it is so easy and inexpensive. I didn't have corn meal the first I made them and left it out and they were still great. Highly recommended!
