Wow! How can something this simple be so good. I'm already craving more. I had made fresh pesto last night, happened to have a just-picked tomato from my garden and pine nuts in the fridge (leftover from making the pesto). I feel like one lucky girl. I opted to not toast my pine nuts. This was so tasty, fresh and healthy. I think I'm headed out to the garden to pick another tomato.

This is an amazing recipe. For something soooo simple it drew gasps of delight from our guests. Freshly made pesto using Kittencal's Perfect Pesto with lightly toasted pinenuts sprinkled on tops, it looked good and tasted explosively awesome : ))) Thanks Sarah Jayne for a recipe we will use over and over and over.
